When you use the oven to bake bread or to grill meat, the food is cooked because the warm air is circulating around the cooker. In addition to a fan and an exhaust system, convection cooking also relies on heating elements to maintain heat throughout the food. In an ordinary oven, you have two heating elements, one at the bottom of the oven is used for baking food and giving it a crispier base, while one at the top of the oven is used for broiling. This allows the food to be cooked quicker as the surface area the food is cooked is larger compared to traditional ovens.

Food generally cooks faster because heat stays more constant, there are not cold or hot pockets of air as you might find with conventional ovens. Because convection ovens cook by moving warm air throughout the interior of the oven, the food can be cooked more quickly, and cooking results are usually more tender and flavorful. You want to cook your steaks on a broiler since it gets hot, enough for the steaks to roast, no searing required. While the broiler setting on your oven is obviously warmer than your regular bake setting, the differences between the two cooking methods run deeper than just that. Gently put well-oiled steaks into pans and sear until deep, browned crust forms and the steaks start to come apart, 3 to 4 minutes. Your best option is to first pan-sear steak to create a crispy, golden crust sealing in juices, followed by roasting it in the oven.

To grill a steak, put it on a rack placed over a shallow roasting pan and preheat oven to 400degF (204degC). Roast in a 375deg conventional oven or 350deg convection oven until a meat thermometer placed in the middle of the fattiest portion registers 120deg to 125deg, 1 1/2 to 2 hours. This method is ideal for a quick roast because convection fans keep surface area of the meat hot as other parts cook.
