The amount of time it takes for the defrosting process to take effect will vary depending on the size of your piece of chicken. This method is fast, but requires careful monitoring, because it has the tendency to cook instead of thaw meat, making it tough and stringy. Defrosting the chicken breasts in warm water is the second fastest method, is largely hands-off, and it defrosts the meat pretty evenly (or, at least, does not cook some meat while the rest is still frozen).

The microwave does not thaw equally, and can wind up cooking some of the meat while other parts are still frozen. Using the microwave to thaw chicken is the least ideal of safety-thawing methods, as the meat gets heated unevenly. The reason that you cannot thaw the package of chicken again once it has been microwaved is that certain areas can become hot and start cooking in the process, meaning any bacteria that were there will have been unkilled.
