Why Does The Lettuce Turn Pink?

According to a study published in the journal Euphytica in August 2017, pink ribs can appear when lettuce is “overripe” or stored at high temperatures. Exposure to high temperatures or overripe lettuce causes lettuce ribs to turn pink. A common way lettuce responds to such stressors is through the so-called “pink rib”, which you can see in the pinkish-brown area on the crisp lettuce rib, which is brownish in the image above. Pink lettuce is associated with pink rib, a stress response that causes lettuce ribs to change color from white to pink.
A lettuce leaf with a few brown spots or signs of red and pink undertones is unappetizing. If the lettuce looks crisp and only slightly pink or brown, it’s probably still safe to eat. In other words, if your salad has a few pink bits in it but is otherwise dry and crispy, it’s good to eat.
As long as the lettuce isn’t wilted or sticky and appears to be in good condition, you can eat it with pink edges and everything. If you buy lettuce from the grocery store, double-check it for good color and crispness, and don’t buy lettuce that’s already turned red. While wilted or shriveled lettuce is safe to eat, it may be discarded for quality reasons unless it has already begun to darken. Rotten lettuce can contain harmful bacteria that can make you sick, so it’s best to avoid lettuce that doesn’t look or smell fresh.

If your lettuce has been stored properly, it has turned a little brown, like the red on your lettuce, you can eat it. Sometimes you can eat brown salad. If lettuce has been stored next to a bunch of apples, peaches, pears, or tomatoes, this can cause the lettuce to turn an unattractive rusty red or pink color. According to the UCLA Statewide IPM program, another cause of lettuce browning is tip scorch, usually associated with rapid growth or lack of soil moisture. Berkeley Wellness explains that lettuce leaves can turn brown if damaged or cut because exposure to air causes oxidation. In fact, this is due to exposure to oxygen, which causes the plant cells in lettuce and other species such as asparagus root to turn white over time, causing them to become brighter than before due to changes in pigmentation.

The color can also spread all over if not used immediately, and the salad will also start to have a metallic taste. If, even after using a vegetable-safe fungicide, you still have issues with Fusarium wilt, you may need to cut your lettuce crops altogether and call it waste of the season. If you are eating lettuce and it feels fluffy and soft instead of crisp, then it is a rotten lettuce.
