If you need healthy cooking oil, you can use olive oil, avocado oil, or coconut oil. If you need light cooking oil, you can use vegetable oil or canola oil. If you need flavorless cooking oil, you can use grape seed oil or sunflower oil. There are many substitutes for cooking oil.

The idea with choosing your replacement is to pick an alternative to butter with milder flavors, which adds moisture to anything you are baking. The beauty of butter alternatives for baked goods is that you have a little bit of flexibility because you do not need to match the high smoke point of a vegetable oil (as in baking). Vegetable oils can be extracted from nuts, seeds, fruits, and grains, and they have high smoke points, making them good for cooking at high temperatures. Avocado oil has an even higher smoke point (a full 520 degrees F) than vegetable oil, making it a great choice for roasting and other high heat cooking — its rich, buttery taste works well in everything from salad dressings to desserts.

It is also mild in taste and holds up to high heat, making it an ideal, 1-to-1 replacement for vegetable oil. Avocado oils incredibly high smoke point is ideal for frying recipes such as pan-fried garlic chips, where you can even use leftover oil afterwards. Olive oil has a stronger taste and lower smoking point, so you should never use it to fry, and you should use it for specific baking recipes only. Since olive oil has really low smoke point, I would use it for just substituting in non-frying recipes, for sauteing, or light sauteing. Because it does not go through many processes, it keeps the initial scent and flavor, which can impact your dishes.

If you want some oil for medium-low heat sauteing, you can substitute 1 for 1 with olive oil. You can use rendered coconut oil or butter as a 1-to-1 replacement for vegetable oil in baked goods such as muffins, cakes, and cookies.

It may seem weird, but apple sauce makes an excellent replacement for canola oil or vegetable oil when used in baked goods. If you are looking to get fancy with your fat-free baked goods, you can use other crushed fruits like bananas and pears (or even pureed pumpkin) just like with apple sauce.

Apple sauce, crushed bananas, pureed prunes, and even mayonnaise can replace butter in baked goods like cakes and cookies. Canola oil is the most common option used in most baked goods recipes, and it can be replaced with one-to-one with one cup of applesauce. Canola oil has the lowest saturated fat content of all the common cooking oils, making it a heart-healthy substitute for vegetable varieties. Canola is a great replacement for vegetable oils, since you can use it for frying, sauteing, baking, or even in salad dressings, as it has a relatively neutral flavor and a similar texture to that of vegetable oils.

Because coconut oil has a mild tropical flavor and nuttiness, you can use it to fry, roast, grease your pans, replace oil in recipes, make curry, and even bake some other foods. The oil can be used as a 1 to 1 substitute to melting butter or oils when preparing baked goods like slices of bread, cookies, and cakes.

You would normally melt the butter before adding it to the recipe, and the flavor may even be better than using oil. As an alternative to vegetable oil, butter can be melted and then used at an equal ratio — just be aware this substitute does not work well with stir-fries, because of its lower smoke point. Butter might not be the healthiest alternative on this list, thanks to its high saturated fat content, but it is a staple of kitchens and an easy replacement for vegetable oil in savory as well as sweet recipes.

We do not recommend cornstarch in baking recipes that have high butter contents, because it is prone to changing the texture of your batter. While the all-fat replacement is incredible, keep in mind the absence of oil fats will give you denser baked goods.

You can combine fruit mixtures with an equal amount of baking-safe oils to help enhance your baked goods texture. A recipe calling for butter in a moist baked good, such as pies, cakes, or muffins, is better made with lighter, more benign varieties such as canola (rapeseed), sunflower, soy, and corn. When it comes to cooking and baking, one common ingredient that you will find in a lot of recipes is vegetable oil, which is a neutral oil made by extracting oil from seeds or parts of fruits. Oil is generally used as a moisture-binding agent in baking, making ingredients such as fruits and vegetables appropriate substitutes, too.

Sunflower oil is also the main component of most cooking oils, which makes it an appropriate flavorless substitute for any recipe. Sesame oil has a very strong, distinct flavour, so be sure that it works well with other ingredients in the dish before using it as a vegetable oil substitute.
