How To Preserve Kale For Long
Kale is a leafy vegetable and can be preserved in the freezer. Blanch the leaves of kale and let them dry on a paper towel. Once dried, on a clean dry paper towel wrap them and place them in a plastic zip-lock bag. Place them in the freezer and they will last for 6 months.
If you want to freeze coleslaw, use a salad spinner to remove excess moisture, or pat dry with paper towels. Immediately submerge in cold or ice water, when time is up, strain off excess water, turn over if possible, or spread cabbage on a clean kitchen towel and roll up. While the chopped leaves are cooking, prepare a large bowl of ice water (about half cold, half ice) and set aside. When the chopped leaves are soft but still bright green, pour the excess water from the cabbage into a colander. Sink (drain boiling water down the drain).
If you want the cabbage leaves to melt and break easily, spread them out on a baking sheet and pre-freeze in the freezer for 60 minutes. If you don’t mind having the kale leaves freeze in large chunks, just place them as tightly as possible in freezer bags.
If you don’t need a lot of kale at once, you can crumple the kale leaves into 1-serving bunches, place them on a baking sheet and freeze for about 2 hours or until firm. If you don’t know how much kale you need to use at one time, or hate the idea of wasting a lot of half-empty freezer bags, you can put all your kale in one bag. If you know you want to add kale to a variety of smoothies, but don’t want to make the smoothie in the freezer or do any other prep work, you can transfer the kale directly to a freezer bag. For smoothies, you can freeze the cabbage in ice cubes before removing it from the frozen state and placing it in freezer bags.

If you don’t plan on switching to kale within a week, you can freeze kale leaves to use later in green soups or smoothies. If kale is thriving in your garden but you’re not ready to use it yet, frozen kale will save your precious green leafy vegetable and be on hand when you’re ready to use it. You can definitely freeze the extra kale and use it for a variety of recipes in the future – it will likely retain its texture even after being frozen. If you leave cabbage in the freezer for more than a year, it will become more brittle and may taste bitter or unpleasant.
Determining if your frozen cabbage is bad can be tricky, as it usually comes out of the freezer with a more crumbly texture than when you put it in. Frozen cabbage also tends to be quite tender when frozen, so it can easily break into small pieces, which also makes it less suitable for salads. Frozen vegetables tend to get a little softer after being frozen and thawed, so I don’t recommend using frozen kale in a salad or any other recipe where you want it to have the same texture as fresh kale.

Blanching is necessary to preserve the quality of cabbage or any frozen vegetables for more than a short period of time in the freezer. The big advantage of blanching cabbage is that it takes up much less space in the freezer because the cabbage wilts.
