How To Preserve Cilantro Properly
Fresh cilantro can be preserved for long in the freezer. Ensure your fresh cilantro is washed with no moisture left; otherwise, they will mold. Then arrange them in a single layer of an air-tight container and place them in the freezer. The cilantro, when frozen, should last for 12 months.
Storing cilantro in the refrigerator is the easiest way to keep aromatic herbs fresh and only takes a few minutes. Freezing will allow you to thaw your cilantro whenever you plan on using it, and can last several months. Canning is very different from blanching and freezing, but it will keep your cilantro fresh for up to a month.

Coriander does not retain its bright green color when frozen, so we recommend using it in cooked dishes such as soups and casseroles. While a significant amount of cilantro can be dried, most cooks will tell you that dried cilantro isn’t ideal if you’re after the taste and texture of a fresh herb. Fresh cilantro has crunchy stems and tender leaves, making it prone to wilt and dry out if you don’t store it properly. Because cilantro is an herb that is mostly used fresh, it can be incredibly frustrating to use as you may find the plant has died the next time you use it. Cilantro can be stored in the freezer for about 3 months, but if left for longer, it will lose its flavor and aroma.
Frozen cilantro is not the best option to add to salads because once thawed it will change in appearance and definitely won’t look good in salads (although you could try blanching it, it’s unlikely helps a lot). Coriander freezes well because it does not contain moisture and does not absorb the smell of other ingredients. Cilantro tastes freshest and enhances everything from salsas to soups, but this herb wilts quickly, especially if not stored properly.

You can dry fresh cilantro by cooking it at 300 F. You can then puree it and store it in a spice jar for up to a year. Put the leaves in a food processor or blender and puree them with olive oil using a ratio of 1/3 cup to a cup or two of oil, depending on how strong you want the cilantro to taste.
