How To Prevent Eggs From Cracking When Boiling Them
You can prevent eggs from cracking while boiling them. Firstly, don’t drop the eggs in the water harshly. Place the eggs gently in the water when it comes to a boil. Secondly, add a tablespoon of vinegar to the water. This will prevent the whites to come out even if the egg is cracked.
Start with old eggs, cook them very hot (but don’t use a pressure cooker), cool quickly and completely, crack them all over and peel them under running water. Leave the eggs in the boiling water for 15 minutes (you can add a few ice cubes to chill the eggs if using them right away) or refrigerate them overnight. Starting in already-boiling water will help the shells separate from the eggs earlier, but you’ll need to reduce the heat to low if you want the egg whites to be tender and not chewy. You may need to adjust the handle up or down a bit for the first few minutes until you are sure it will continue to boil. With steam, there’s no need to lower the heat – the lower-density vapors mean that steamed eggs actually cook a little softer than hard-boiled eggs.
