How To Cook With Dried Chipotle Peppers
Chipotle peppers can be used to cook as any other dried peppers. They can be grinned into child powder or flakes. Then, used for dry rub or any sort of seasoning. To hydrate them, cover them with boiling water for 15-20 minutes; you can also cook them directly on your salsa.
However, it does not mention one thing: chipotle peppers are not only dried jalapenos, but also smoked ones. Because they are a dried form of jalapenos, they contain more concentrated levels of capsaicin (the compound that gives chili its heat). Chipotle is a term that goes well with smoked chili, it’s the best smoke-dried jalapeno pepper.
A great dried and smoked jalapeno, Chipotle is also known as ahumado chile or meko chile. Smoked dried Huachinango peppers, called big chipotle, have a similar flavor but are larger. Chipotle grande is a smoked Huachinango pepper with a similar flavor, but the chili is larger and more expensive.

While smoked paprika is a much milder condiment than dried chipotle or even fresh jalapenos, add your desired amount of cayenne pepper to amp up the spiciness. Put a little more chipotle than you need in the pan, or sprinkle with cayenne pepper for extra spiciness. In a pinch, you can mix fresh jalapenos and smoked paprika into a dish to bring the spice and smoky flavor of the dressing closer to chipotle.

The larger ones with firm brown skins are called Chipotle Mecos and are used as dried chili. The larger meco has a smoky flavor and is a chipotle favorite of many locals.

Whether you’re adding a can of chipotle to a sauce or dusting dried chipotle powder over popcorn, the chipotle pepper imparts a rich, smoky flavor to everything it touches. Dried peppers are moderately hot, ranging from 5,000 to 10,000 SHU, and are sold whole, ground, or soaked and preserved in vinegar-based sauces. Dried chipotle peppers are an excellent source of vitamin C to boost the immune system, vitamin A to support healthy organ function, and fiber to regulate the digestive tract. Like most spices, chipotle will not “go bad” as it will lose its potency, which happens after about six to eight months for powder and about a year for whole peppers.
