You can cook black rice on the stovetop (this video will show you how), but after years of conflicting results on the stovetop, I bought a rice cooker and this is by far the best way to cook any type of rice.

Any black rice recipe will tell you that once the rice is thoroughly rinsed, you can add the rice directly to the rice cooker without any additional preparation. If you have a pressure cooker or pressure cooker, you can simply cook the rice in the ratio of 1 cup of black rice to 1 cup of water.

If all the water has evaporated but 1 cup of black rice is not fully cooked yet, add 2-3 tablespoons of water to a pot or rice cooker and continue to cook for 5 minutes. If you want to add more rice, you can modify the recipe in a similar way: 2 cups of rice to 2 cups of water. To get the right water ratio (because the rice will start absorbing water and you won’t be able to tell how much water you need), rinse and add the right amount of water before soaking.

You can try using a handful of rice, but it can be a little tricky to measure the water. If you’re just cooking brown rice, you can use a mixed grain-water ratio. In fact, I had to experiment a lot to find the best ratio of rice to water. To my surprise there were no cooking instructions on the package, since I don’t know how to cook black rice, I thought the standard ratio of 1 part rice to 2 parts water would be fine.

Black rice is easy to cook, as are most types of rice, but if you try to cook it the same way as white rice, with the same ratios of rice and water, you’ll be disappointed with the results.

While it doesn’t make much sense to pre-soak black rice just to shorten the cooking time, it’s still a useful step for other reasons, like making it easier to digest. Pre-soaking the rice overnight reduced the cooking time to 5 minutes, but changed the texture of the rice slightly. I found that pre-soaking for 1 hour did not change the cooking time nor did it affect the taste or texture of the rice.

As a general rule, black rice should be boiled with two cups of water per cup of rice, about 45 minutes after soaking, or up to 60 minutes if cooking unsoftened rice. If you’re using another recipe that requires a certain amount of water to cook, be sure to add another 1/4 cup of water to the rice cooker. You can easily double or even triple the recipe; just make sure you use a pot large enough for the rice that will cook and puff up.

You can cook black sticky rice in a rice cooker following the same recipe and water/rice ratio. Cook black rice by soaking, add water, washed black rice and salt to a large saucepan. You can add salt while adding the water so the rice will taste better.

You can also stir the rice a little with your fingers to remove excess water. Rinsing not only removes starch; it can also remove any debris or insects that may have gotten into the rice while packing the rice. Rinsing the rice removes all impurities and, most importantly, removes the surface starch that otherwise causes the rice to stick together or become chewy during rice cooking. Giving the rice some time in clean water also removes surface starch because this can cause the rice to stick together or give it a chewy texture (via The Kitchn).

Use plenty of water, a bowl, and/or a fine sieve or colander, and rinse the rice in the pot until the water is as clear as possible. You can also mix 1 cup of black rice with your fingertips or lightly tap the sieve/washer handle against your hand to remove excess water. You will see purple-black water coming out of the rice; Continue rinsing the rice until the cold running water is no less colored or clear.

After washing 2 cups of rice and removing the rinse water, add 2 cups of filtered water to the rice cooker pot. Mix 1 cup washed black glutinous rice with 1 3/4 cups water (or chicken or vegetable stock), cover, and add brown rice. Mix 1 3/4 cups water with 1 teaspoon olive oil per cup of rice.

Just stir it every five minutes or so to ensure the rice cooks evenly and is uniform. Let the rice rest in a covered pressure cooker for 10-30 minutes after cooking, then peel and serve.

The washing and filtering cycle must be repeated two or three times so that the excess starch does not boil away in the rice cooker and turn into a sticky mess. Remember to wear clothes that you don’t mind getting dirty while cooking, and quickly wipe up any excess starchy water that runs out of the rice cooker with a paper towel every time it boils. If you don’t thoroughly wash black rice before cooking it in the rice cooker, you can end up with a chewy result, or worse, excess starch can cause the rice cooker to erupt and spill the starchy purple. mush all over the counter in your kitchen.

What Setting for Black Rice in Rice Cooker?

First of all, add already rinsed black rice along with a fixed amount of water and a pinch of salt in a rice cooker. Mix it and then close the lid and fix it tightly. Switch on the rice cooker and press the “brown rice mode”. If this mode is not present then simply press “cook”.

Does Black Rice Need to be Soaked?

It is totally optional to soak black rice before cooking it in a rice cooker. If you like to eat rice with a moist texture then you should soak it before cooking. But if you want to eat more soft texture rice then you must not soak the rice and directly cook it.
