How To Boil Scallops Correctly
Boiling scallops is not recommended as it can overcook the scallop and make it rubbery. But you can steam them efficiently. Place water to boil on stove with steamer. Once done, place the scallops on the steamer. Close the lid and let it steam for 5 to 7 minutes.
How to cook scallops – includes grilling, pan frying, steaming, boiling and frying. Larger scallops take longer to cook, but most scallops only take a few minutes or 1-2 minutes per side. If you use smaller scallops, they will likely cook faster, in about 5-6 minutes. Simmering for just 2-3 minutes is enough when it comes to cooking the scallops.
It only takes a few minutes to fully cook the scallops and create the crispy crust that makes them so delicious. Then flip and cook for an additional 2 minutes, or until the other side of the scallops is browned and opaque on all sides. Add the scallops at the end so they don’t get tough; cook 2-3 minutes. I season one side of the pan and put the seasoned side down in the hot pan, then when that side is done, I season the other side. Rinse the scallops with cold water and place them in a large pot filled with water. For a quicker solution, you can put large scallops in an airtight bag and place them in a large bowl under running cold water. When the water boils, lower the heat and simmer the scallops for about 2-3 minutes. It is important to note that the scallops should not be too soft, otherwise they will become rubbery and hard.
Soaking causes wet scallops to absorb more water, and when you cook them, they dry out a bit and don’t turn brown from that extra liquid. Soaking helps wet scallops stay firm, smooth and shiny for a long time.
Wet scallop will just simmer in the sauce and not brown properly, so pat dry on paper towels before salting and peppering. When wet scallops are cooked, wet scallops release liquid rather than browning, making it hard to get that deliciously browned surface.

Cook on one side for 2 minutes, or until the bottom of the scallop is caramelized and browned, then flip the scallop and continue cooking for another 2 minutes, until the other side is the same effect. Carefully place each scallop in the cast iron or non-stick skillet, being careful not to overfill.
Scallops are a lean source of protein and should be cooked quickly over relatively high heat to prevent them from drying out. I actually cooked the scallops a bit during the recovery operation because they take 10 minutes to cook, they are very stuffed (it’s like a big protein ball) and, most importantly, they are delicious. Scallops already taste amazing, but adding a little butter, garlic, and fresh herbs towards the end of cooking makes them worthy of a restaurant.
