How Much Juice Does One Lemon Hold

Citrus fruits differ in size. You may get a large lemon at times and a very small one at other times. However, the juice from one medium-sized lemon is usually between 2 and 3 tablespoons when squeezed whole. You can squeeze half a lemon if you need about a tablespoon of lemon juice.

To determine exactly how much juice a lemon contains, I squeezed nearly a dozen lemons—small, medium, and large—and compared the yields. To see how much juice you get from a small, medium, and large lemon, take each lemon and squeeze it all the way until only one shaggy, juiceless lemon remains.

According to food regulations, a medium-sized lemon weighing about 3.5 ounces contains about 2 tablespoons of lemon juice, so if a recipe calls for one lemon juice, that’s exactly what you should use in a dish. If a recipe calls for 4 tablespoons of lemon juice, next time you will need to buy at least 2 small lemons or 1 medium lemon. Remember that a medium-sized lemon contains 2 to 3 teaspoons of juice, and size accordingly (use the same amount of bottled juice as you would use fresh juice).

Regardless of how much juice is stored in a lemon, the way you extract it also affects how much juice you get from it. Lemons tend to vary in size and juiciness, making it difficult to measure the exact amount of juice you’ll get from a lemon. Of course, fruits can vary both in size (a large lemon can contain much more than about 2 tablespoons of juice, and a very small lemon can yield less than average) and in juiciness.

When I stumble across a medium-weight lemon (sorted by a bag of lemons), I make sure all the juice is squeezed out. If you don’t have these squeezers, use pliers to hold the lemon and help you squeeze by hand. Other juicing tools include hand juicers, designed to help you squeeze the juice out of each lemon half. For those who squeeze lemons a lot, you might consider investing in an electric juicer to make your life easier.

If using a cutter or juicer, cut the lemon in half horizontally to get the most juice. To use a citrus reamer, you first need to cut the lemon in half, insert the blade into the open side of the lemon half above the bowl, and flip it over. Cooking instructions for recipes usually mean cutting a lemon in half and squeezing some of it into whatever you’re cooking. All you have to do is cut the lemon in half, place one half in the juicer cup with the open side of the lemon facing up, and squeeze it into the bowl so the juice drains completely from the lemon.

If your recipe calls for the juice of one lemon, you can use three tablespoons of bottled juice instead. You can freeze lemon juice in an ice cube tray to make about two tablespoons quickly when needed. One (1) cup of lemon juice has only 61 calories (or less than 4 calories per tablespoon) and no fat.

You may get a sad surprise when you cut open a large beautiful yellow lemon, only to find that the large one has become dry and definitely “not juicy”. Anyone who has gone for a lemon from a basket or bowl a few days later and noticed how complicated it looks can attest that the juiciest lemon is the freshest.
