One package of dry yeast is 7 grams or 2 1/4 teaspoons in weight. Typically baking recipes require half a packet or one full packet of dry active years. This inexpensive commodity costs less than a dollar per packet as it’s sold in packs of three or five or more.

You can use instant yeast instead of active dry yeast

The good news is that you can use instant yeast packs instead of active dry yeast packs. When a recipe calls for a package of instant yeast but you only have one jar of yeast and get a more accurate measurement than that, add 2 teaspoons of instant yeast directly to the flour mixture.

If the recipe calls for a pack of active dry yeast, but the jar has yeast, dissolve 2 1/2 teaspoons in warm water to activate the yeast, then add the solution to the flour mixture.

How much flour to use?

Although the ratio of yeast to flour can vary from recipe to recipe, you must use one packet (7 grams) of active dry yeast with about 4 cups of flour. This means that a bag of dry active yeast, a bag of instant yeast, a bag of bread machine yeast, or a bag of instant yeast will contain the same amount of yeast.
