For example, a bag of big onions, which can weigh around 5 pounds, may hold 1 or 2 medium-sized or small onions. In general, a large onion is roughly the size of a 1 quart measuring cup, a medium onion will be roughly the size of a one-half quart measuring cup, and a small onion will be roughly the size of a 1/4 cup. Recipes will usually call for a single small, medium, or large onion with no reference to how many cups should be made from chopped onions of those sizes.

Let us figure out what number of small, medium, and large onions would make up 1 pounds of the total. A small onion that is 1 to 2 inches across would weigh about 2.46 ounces (70 grams). If you were to take two onions and combine them, it would total approximately 1 ounce. This means if you had two onions, you would have to divide the total weight by two in order to come up with an average weight for each onion.

With that in mind, we can estimate that cutting a medium onion into strips about 1/2″ thick can yield anywhere from twice as many cups as you would have had the onion sliced.

In our tests, the medium onion yielded around 2 cups of diced onions, and the large onion yielded 3 cups of diced onions the same size. After doing this, we peeled a few samples of onions, cut them up to medium, one-quarter-inch slices, then measured each ones yield. We dug through our giant box of onions in our kitchen pantry, picking out some sample onions.

For our testing sample, we chose a medium yellow onion, between 2-3.25 inches across. Onions classified as medium are those that are between 2 and 3.25 inches in diameter. The onions categorized as large are those having their diameter of 3 inches or larger. On our grocery store shelves, the largest onions, classified as super-large by the National Onion Association, are typically 4 to 6 inches across, weighing around one pound.

We are not aware of any standard sizes or charts of the products, but from the previous Nigella recipes, we would estimate that the largest onions are around 225-275 grams (8-9 oz). A medium onion would be smaller than that, around 150-170g (about 6 ounces), and a small onion about 125g (4 1/2 ounces) or less. A medium shallot would weigh just about 1 ounce, which will produce about 1/4 cup of chopped onions. If a recipe calls for 1 cup finely ground onions, that would require about 3 medium large onions, or if you want larger chopped sizes, then about 2 would work.

Next time a recipe calls for a cup of chopped onions, you will be sure to know how many different types of onions you will need. If you do not have a scale and are left guessing at onion sizes, knowing how many cups of chopped onions are the equivalent of one medium onion is useful. If you are someone who loves onions, and loves recipes that make use of them, you might find yourself scratching your head when a recipe calls for one cup of onions. Now that we have decoded the centuries-old mystery of what a recipe means when it calls for an onion that is particularly large, you can chop up those onions with confidence.

The When a recipe calls for 1 onion, what is it? That is a fun question. Generally, if the recipe calls for a given amount of onions by weight, instead of more exact measurements, then the results of the recipe are forgiving for the addition or absence of one or two extra ounces (or less) of onions.

For example, a 3 oz onion might yield a final amount of chopped onions 1 to 2 tablespoons smaller than that of a 5 oz onion, even if both onions are in the smaller onion category. Sometimes they will give you a volume amount of onions (2 cups), sometimes as weight (4 ounces), and other times onions are given in the yield description (2 medium Bermuda onions).

If you are the kind of cook that prefers using precise measurements, you will not want to miss our discussion on the equivalent sizes of onions in cups.

Many people have done tests to determine if an onion is one cup, and the consensus seems to be that one medium onion yields between one to two cups. Using the red grapefruit as the size guide, you might expect one medium onion the same size to yield around 3 cups of onions for any dish you are cooking. If your recipe calls for a cup of diced onions, you should feel confident buying a medium-sized onion about the size of a navel orange.

If you are planning on making a batch of chopped, diced, or chopped onions, you should stick with smaller, medium, or large onions. To make this accurate, I have to make this weighted; in order to give you instructions, I have to know what, in fact, 2 big onions, chopped. Like most fruits and vegetables, the amount of onions that need to be measured in a 1 -cup quantity depends on how finely chopped they are. If you do not yet have a scale, I would not stress about this much; one or two extra ounces of onions will not spoil your soup or meatloaf, or anything else.
