Since eggs come in various sizes, an average egg white of one egg weighs roughly about 30 grams. Considering that the white make up 2/3 of the egg and the yolk only 1/3, the white weighs more than the yolk. But this weight can increase or decrease depending on the size of the egg.

The egg white of a medium egg is 27 grams, a large egg weighs about 30 grams, and a very large egg weighs 34 grams. In a large egg containing about 7 grams of protein, 3 grams is the yolk and 4 grams is the white.

If your egg size is different than the standard “large” egg, follow the instructions above for measuring incomplete eggs to find out what half the yolk will be.

If the yolk makes up one-third of the egg, then of course the egg white makes up the remaining two-thirds. The yolk, or the yellow part of the egg, makes up about 34% of the egg’s liquid weight. The yolk contains all the egg fat and less than half the protein.

Note that this is the weight per dozen; there will always be differences between individual eggs, so the weight of a dozen averages out these small differences.

Weight is an estimate as in the UK large eggs are defined as weighing between 63g and 73g (in their shell) so there will be some variation between eggs. The average allowable weight for a large egg in Canada (without a shell) is 50 g, 30 g of white and 20 g of yolk.

For egg yolks and egg whites, they are 0.54 ounces and 1.19 ounces, respectively. An X-sized egg weighs 1.90 ounces when measured as a whole egg. A standard large egg is equivalent to 1 tablespoon of yolk and 2 tablespoons of white.
