If you’re cooking a dish in which your main element is chicken (roast, steak etc.) then you should allot half a pound for one person. However, if you think that the person in question might have a big appetite then you should keep half and a quarter pound for one person.
When deciding how many pounds of chicken breasts or drumsticks to eat per person, consider whether you’re using boneless or boneless meat. For boneless breasts or thighs, you will need 1/2 # chicken per person. If serving other meats and dishes, use 1.5 boneless chicken breasts per person.
