To marinate chicken in soy sauce, whisk together soy sauce, olive oil, lemon and garlic in a bowl with salt and pepper. Add chicken breasts to the bowl and coat it with the soy sauce. The ideal amount of time to marinate chicken is 5 to 6 hours, certainly not overnight.

As soon as the chicken marinates, the saturation of the chicken flavour from the marinade will increase by the minute.

I recommend keeping the chicken for just an hour if you want the best result, as the marinade has a lot of water, which will dilute all the flavours.

How longer to marinate chicken?

The longer you leave the chicken in the sour marinade, the worse the surface texture will be, and it will become more stringy and dry, so don’t let the chicken soak for more than one night. Chicken left in an acidic marinade for too long will become tougher as the protein molecules move closer together.

Drying the drumsticks is important because the marinade contains sugars that can scorch the chicken. Line a baking sheet with aluminium foil and remove the chicken from a large resealable plastic bag; discard the marinade. It is recommended to throw away any unused marinade that has come in contact with the chicken unless you cooked it first.
