To marinate chicken in soy sauce, whisk together soy sauce, olive oil, lemon and garlic in a bowl with salt and pepper. Add chicken breasts to the bowl and coat it with the soy sauce. The ideal amount of time to marinate chicken is 5 to 6 hours, certainly not overnight.

The chicken tastes better if marinated in soy sauce for at least 3 hours before cooking, as marinating overnight removes all the spice from the water. You can marinate the chicken overnight (in the refrigerator), but if you add soy sauce to the marinade, sometimes the raw chicken will change colour if marinated for too long.

You will need to leave the chicken to marinate for at least one night, but you can leave it to marinate for up to two days if you like. If you plan to marinate any meat, even chicken, leave it for at least two hours.

Don’t go overboard with marinating the chicken, but don’t plan to marinate for just 15 minutes.

If you marinate the meat in a not-too-salty mixture, you can do this for a couple of days. For example, if you fill a bowl with a vinegar-based marinade and soak the chicken for 24 hours, you end up with a porridge-like sour porridge.

Very acidic marinades can toughen the meat over time, so follow the recipe or package directions. You can make raw chicken juice for the sauce by boiling the remaining marinade, but it turns out cloudy.

The longer you leave the chicken in the marinade, the more bacteria will get into the marinade. Use it again in a few days, and you will turn your next meal into a rich bacterial pool. As soon as the chicken marinates, the saturation of the chicken flavour from the marinade will increase by the minute.

I recommend keeping the chicken for just an hour if you want the best result, as the marinade has a lot of water, which will dilute all the flavours.

For how long can you store your marinade?

Place the chicken in the marinade, ensure it is well covered, and refrigerate for 4-6 hours. Marinated chicken can be stored in the refrigerator for 2 days; any raw marinade should be discarded. If you have leftover boiled chicken, you can expect it to keep in the fridge for 3-4 days.

Preheat the leftovers in a skillet in the oven to 350 degrees Fahrenheit. You can also gently reheat the chicken in the microwave.

Using a skinless chicken recipe (the skin will be crispy in the oven but not in the slow cooker)

Add a decent amount of seasoning for a skinless chicken breast in as little as 30 minutes, especially if you poke holes in the surface to allow the marinade to soak in. To marinate a whole chicken, you’ll need at least 4 hours for decent penetration, but soaking up to 12 hours, depending on the chicken’s size and the marinade’s nature, is possible.

If you are working with small pieces of chicken, you should leave them to soak for no more than 12 hours.

It is recommended to throw away any unused marinade that has come in contact with the chicken unless you cooked it first.

There is no need to put the chicken in the fridge – raw chicken (whole or cut) will last 1-2 days. Make the chicken easy to cook the next day with some prep work ahead, and it will have the most flavour. With it, your chicken will stay in good condition, and you can store it in the refrigerator for days without worrying about side effects.
