As a general rule, there is no particular need to freeze Parmesan because it keeps so long in the refrigerator (several months in most cases) and there will always be a slight loss in quality once something has been frozen. Opened Parmesan keeps its highest quality for about 1-2 months (it can keep up to 6 months if stored properly) when refrigerated at or below 140 degrees Fahrenheit from opening. This is the time when you can enjoy the highest quality and taste of Parmesan, but you can still use expired Parmesan if it has been stored properly.

You’re much less likely to get sick if the Parmesan isn’t sold refrigerated, so you may still be able to eat expired grated cheese for months on end. What’s even more surprising is that when your cheese is refrigerated in transit and sold in the supermarket, it can keep for 10-12 months. It is also for this reason that cheese is usually sold under vacuum, as it can be stored for longer than other varieties. Numerous studies have shown that you can eat opened grated cheese for approximately 4-6 months in a refrigerated condition from manufacture and sale in a sealed ziplock bag or vacuum sealer.

Even if the cheese has mold, cut off any dry or wet moldy parts. As long as the cheese does not have a musty taste, the cheese can be eaten if stored properly. As long as there’s nothing rancid in the cheese and it hasn’t really gone bad, it’s safe to eat past its expiration date. Personally, for my peace of mind, I think that hard cheeses like Parmigianino should be stored in the refrigerator as soon as possible, especially when opened. Unfortunately, grated Parmesan doesn’t keep as long as a regular slice or block, so once opened, you may want to consume the cheese within 5-7 days for the best flavor.
