The National Center for Home Food Preservation suggests immediately discarding any open bacon and placing it into a zipper-lock bag.

After cooking the bacon according to your preferred method, all that is left is to strain out the remaining bits of meat from the fat, ensuring it stays stable for long periods. If you are a bacon lover (like me) that regularly cooks bacon (again, like me), then you are certainly aware that there is always a lot of fat left in the skillet once you cook it.

Unfortunately, bacon grease does get old, but, as with all fat, it takes a very long time to get old when stored properly. If bacon fat is stored in the proper manner, free of contaminants, without light exposure, or temperature changes, it has a chance of lasting long; you are more than likely to eat through one batch before it expires. Bacon fat stored in the fridge can last for up to 6 months, and it can be used in place of butter or cooking oil for many dishes.

Because this is an approximation, store-bought bacon fat may keep up to several months past its estimated use date, but may miss a few of its standard features. Since this is only a tentative estimate, it is safe to assume the grease can easily last a few months past this date.
