How Long Does Ricotta Cheese Last?
Ricotta cheese comes with a shelf life of up to 15 days. However, it can be kept for a few more days if the cheese is yet to be opened. Once the cheese is opened, it must be used within 1 to 2 weeks.
Open curd will keep for about five days before it starts to spoil, but this will depend on how aged it has been since you bought it. When stored properly, an opened package of ricotta will usually last about two weeks after opening, provided it has been kept refrigerated. After opening the container, you should eat all the cheese within 3-5 days, although some suppliers say cheese will keep for up to a week after opening. Once the container is opened, the product is finished within 5-7 days if it is fresh, or within 2 days if it has expired.

Otherwise, put a piece of tape on the container with the date you bought the cheese on it. Make sure there’s no air in the container or air can’t get into the package, otherwise the cheese will get freezer burn, reducing its overall quality (or what’s left). Regardless of the type of cheese, refrigerate after opening at 35 to 40 degrees Fahrenheit. If you’re preparing raw or sensitive dishes, it’s best not to use frozen cheese.
You shouldn’t use frozen cheese in cold or uncooked recipes because the texture change in the cheese will be easily noticeable when it’s in your mouth, which can’t bring you a tasty meal. Cottage cheese is not easy to freeze because it has an exceptionally high water content and releases liquid when thawed, resulting in poor cheese quality. Some manufacturers advise not to freeze cottage cheese, but this may be an acceptable option for longer storage of cheese. A warning. If the ricotta has been in the refrigerator for more than a week, it may be safer to toss it. If you opened cottage cheese the day before the expiration date, don’t expect it to be good for another week. However, if you make sure you store your cottage cheese in the fridge as soon as you get home from the grocery store, your cottage cheese will probably be good for a few days after the date on the package.
Any cottage cheese you buy from the store has an expiration date, and while these dates tend to be conservative, they give a good indication of how long your cottage cheese will keep. Unopened cottage cheese that has been refrigerated in a cool place will keep 7 to 10 days past the expiration date if it has been refrigerated at around 40 degrees F or lower. The freeze times listed apply only to premium products – cottage cheese that has been kept frozen at 0 degrees Fahrenheit at all times will keep indefinitely. Once you have baked the cookie dough for two to three days, then keep it in the refrigerator until ready to eat and you are good to go. If you need to keep your homemade ricotta on hand for a day or two, the same rules apply: Seal it in a Tupperware to protect it from refrigerator air and humidity. When storing cottage cheese, it is best to store it in an airtight container. Cottage cheese usually comes in plastic containers with lids, which are great for refrigeration. Leftover ricotta can be wrapped in foil or plastic wrap to prevent spoilage.
You can cut mold off hard cheeses and continue to eat the cheese, but as soon as mold appears on the ricotta, discard it. Some cheeses are supposed to have mold (e.g. moldy cheeses), and many harder, drier cheeses can still be eaten if mold spots appear if they are removed first. With hard cheese, the moldy area can be removed, but in a moist environment such as cottage cheese, mold spores can quickly spread throughout the product. If you refreeze the cheese, the texture of the cheese will be more damaged, which is a good precondition for a bacterial infection (2).

If you see that the cheese has turned yellow and has become unpalatable, it should be thrown away, as these are signs of spoiled cheese. Also, the texture of the cheese will mix with other ingredients and toppings, helping you not to realize you are eating pre-frozen cheese. Ricotta means “ricotto” in Italian and refers to how ricotta was originally created by heating whey left over from other processes such as cheese making. Food safety experts recommend eating ricotta within a week because the freshness of the cheese gradually decreases as air gets in.
Can you eat Ricotta Cheese after the expiration date?
Keep in mind that an unopened container of ricotta may last fresh for two to four weeks and may be useful for a week or two past this date. However, if the date has gone on a long time, it’s a safe bet that the cheese is no longer edible. It is suggested when in doubt, toss it out.
