If the flour smells moldy or sour, the flour is likely expired and long past its best by date. If you stored your flour correctly, then you can rest assured that you can use it. If flour is stored correctly, it may last for two years, and you may be able to use it in several recipes.
With the exception of white flour, which will dry out instantly as soon as it hits the expiration date, all other types of flour may still be used unless it is already spoilt. Because whole wheat flour is made using the whole wheat, it keeps a few essential oils in the grains, and those will break down and give off a rancid flavor as time goes on. It is always best to toss your flour out if it smells bad or shows signs of mold. It is much more likely your flour is going to get weevils or flour beetles in it well before it goes rancid.
The presence of flour beetles does not mean that your flour has gone bad–you can either sieve it and its eggs out, or put the flour in the freezer for several days to kill it. Make a habit of sniffing each bag of freshly opened flour, even if you are new to those flours and you are unsure what they are supposed to smell like. I sniff containers whenever I use my flour, both for the satisfaction of smelling grains, but also for monitoring freshness.
If you are ever unsure, just smell it, and make up your mind whether or not flour is safe to use past its expiration date. Your flour might still be safe to use, even past its best-by date. White flour typically keeps for about one year in your pantry, unopened. All-purpose flour may last between six and 12 months from purchase if stored unopened in the pantry.
