How Long Does Rhubarb Remain Safe to Eat?

At room temperature, rhubarb only lasts a few days. You can extend its shelf life to two weeks by keeping it wrapped and stored in the refrigerator.  You can even further lengthen this period to up to three weeks by wrapping rhubarb in aluminum foil without crimping the ends.

If you want to store rhubarb for a long time, put it in a plastic bag and place it in the freezer where it can be stored for over a year. As for rhubarb, you can store it for over a year in the freezer by cutting it into 1-inch pieces and removing the leaves from the rhubarb. While chopped rhubarb can be washed, dried and placed in a storage bag and stored in the refrigerator.

Wrapped in aluminum foil and stored in the refrigerator, rhubarb stays fresh for over 2 weeks, and sometimes up to a month. When properly stored, rhubarb retains its best quality in the freezer for about 12 months, but remains safe beyond that time.

The best way to make sure your rhubarb stays fresh is to store it properly, pack it well, and keep it out of the kitchen counter at room temperature. Fresh cut rhubarb at room temperature (counter) for 1-2 days until completely spoiled, if stored in the right conditions on the counter. Store rhubarb at room temperature in a brown paper bag away from direct sunlight and heat. It’s also important to remember that if you decide to cut your rhubarb, it’s best to store it in an airtight container; this will prevent it from ripening too quickly.

You can also store rhubarb in a plastic bag in the refrigerator, but make sure the bag is perforated so the rhubarb stays fresh longer. It is equally important to store rhubarb wrapped because it is best stored at high humidity levels, and as mentioned, the plastic helps keep moisture inside.

Wrap the rhubarb stalks in a damp cloth or absorbent paper and place them in a perforated plastic bag in the vegetable drawer of the refrigerator; this will retain moisture. In the case of fresh rhubarb, when you refrigerate it, you can put it in a perforated plastic bag with a zipper, wrapped in a damp paper towel. Like other fresh vegetables, fresh rhubarb can be stored in the refrigerator for several days after harvest. Whole stalks of rhubarb can be stored in a cool, dry and dark corner of the pantry, but to extend their shelf life, it is recommended that you store fresh rhubarb properly in the refrigerator.

Whole rhubarb stalks keep for about 2-3 weeks when properly stored in the refrigerator at no more than 40 degrees Fahrenheit. Rhubarb stalks stored this way should keep refrigerated for at least a week, and possibly twice as long. Rhubarb freezes well, so if you have stalks that you can harvest but don’t need, cut them up and store them in the freezer for later.

Rhubarb frozen this way will retain its quality for at least a few months. Yes, you can freeze rhubarb, but be aware that after thawing you will notice a change in the texture of frozen rhubarb.

If you’re storing rhubarb at room temperature, it’s okay to leave it on the counter, even if that gives it as little time as possible. It’s also important to note that if the rhubarb hasn’t been refrigerated at the store you bought it from, it won’t last long, so be sure to keep an eye on it for the 2nd week. Chopped rhubarb will keep in the refrigerator for 2 to 4 days before it goes bad if stored in the refrigerator under the right conditions. It is best to immediately put the rhubarb in the refrigerator to begin the preservation process; this is true even if you are going to use rhubarb immediately.

If you are going to use them a couple of days after purchase, you can leave them on the kitchen counter and they will last 2 to 4 days.

Since you want to thaw frozen rhubarb, you can thaw it in the refrigerator overnight, or in the microwave or a bowl of chilled water. If you dry the rhubarb before putting it in a gallon-sized bag, you don’t need to freeze the rhubarb on a baking sheet first. You can put the rhubarb directly in the freezer if you like; just cut the rhubarb stems to size to fit in an airtight container or freezer bag, place them inside and freeze. Rhubarb can be frozen for future use by cutting the stems into 1-inch pieces and sealing them in an airtight bag, or stewing and freezing.

Cut stems can be frozen in plastic freezer bags for later use, usually with strawberries picked after rhubarb. Rhubarb stems can be stored in the refrigerator for 5-7 days, unwashed and sealed in an airtight plastic bag or tightly wrapped in plastic.
