How Long Does Cheesecake Last In The Fridge

Under normal circumstances, cheesecakes will keep for 5 days when stored properly. Cheesecake that has been stored in the fridge will keep about one week before starting to be suspect. Like any food, cheesecake which has been opened, but has not been eaten, does not last very long unless stored correctly.

In case that happens, you can keep the cheesecake in the freezer for just over 3 months, and in the fridge for about 3 to 5 days. While other desserts can sit outside for hours with no problem, cheesecake needs to go into the fridge or stored in the freezer fairly quickly. If you are planning on eating cheesecake that has been frozen, remove the pie from the freezer and put in the refrigerator a day in advance.

If you are planning on eating the pie the following day, remove from the freezer and place in the refrigerator for a natural defrost. If you are not going to consume your pie all at once, you are better off letting it defrost in the refrigerator, and then cutting off what you need and bringing to room temperature. You can either re-freeze the leftovers ([JC]) or keep them in the refrigerator if you expect to eat them in a couple days. When you are ready to eat the pie, defrost the cheesecake overnight in the fridge, or 8 to 12 hours, and bring it to room temperature on the countertop two to three hours before serving.

Your third option is to use a pie cover to coat the cheesecake and prevent the cheesecake from picking up any smells from the refrigerator. You could also move the cheesecake into a sealed container, or wrap your cheesecake with foil. Store cheesecake slices in a tight-sided, airtight container to keep pieces from crushing. You may also want to split the cheesecake into smaller portions and store each in its own separate airtight container.

You can also store your cheesecake using sturdy food containers rather than using plastic wrap, if you are running out. If you are planning on leaving the top of the cheesecake unadorned, you might hesitate to put the plastic wrap right over the top of the cheesecake. Meanwhile, you will want to have plastic wrap on which you can lay slices of the cheesecake before you put it into your refrigerator or freezer. Just be sure that your cheesecake does not have any flimsy toppings, like fruits or sauces, that might be affected structurally by defrosting, and then pack slices of the cheesecake into a freezer-safe bag or plastic wrap.

Then, for extra protection from cold air, place the pie into the freezer bag or container. Keep in mind, a freezer is a lot colder than a refrigerator, so you are going to have to do some extra steps to ensure the cheesecake stays fresh.

The goal is to minimise the amount of moisture, so the cheesecake does not take flavors from the other items in your refrigerator. In case your cheesecake is frozen, letting it sit outside for at least 4 hours is a good idea until serving. If a cheesecake is kept too long in the fridge (or not wrapped well in the first place), it may lose airiness, with the texture becoming almost rubbery.
