How Long Do Organic Carrots Last
Organic carrots may last up to 15 days if stored properly without refrigeration. They can even last longer than that if stored in the ground or in sand or if stored unwashed. You should always buy fresh carrots that have not been refrigerated since harvest.
Cooked carrots, however, will not last as long as raw, fresh carrots, only staying edible up to five days. If you cut your carrots into slices or pieces, you can store them in the refrigerator, where they last for around 2 to 3 weeks. If you are using the above method, storing your carrots in a container of water with a lid, the fresh carrots will stay fresh for about 1 month.
Doing so, you can store carrots for months at a time, and they will remain cool and crunchy for five to six months. Doing a dip should keep them fresh and crisp up to one month in the refrigerator, and up to six months when stored for longer periods. Both of these storage methods should help keep your carrots for between one to two months in the fridge.
The pickle recipes that you can find to preserve the carrots will help make them last just a bit longer in the fridge. Canning carrots will help you preserve carrots longer, and they are also more convenient to use since you will not have to take too much time washing them or cooking with them.
You may decide to store carrots in a refrigerator or freezer, but keep in mind that refrigerated ones will keep for far less than frozen ones-3-5 days, as opposed to 10–12 months. Carrots are one of those vegetables that CAN last for quite some time when stored correctly (and if you have the right fridge). For carrots that are cut up and placed into a bowl with water, I strongly suggest having a well-stocked refrigerator, as they can stay fresh for six to eight weeks. For carrots that are cooked through, you should quick freeze it to keep its optimal freshness/taste/texture.

This is not recommended for longer-term storage (no longer than 2/3 weeks), because fresh-picked carrots may become slimy, smell bad, and lose their flavor. Properly stored in a fridge, however, raw carrots may last for as long as four weeks. Before storing, pull off greens from roots: The first thing that any person should do after removing the bag of carrots is (if applicable) separate the tops of the green, leafy carrots from the roots themselves. Refrigerating Prepare the carrots for Storage First, remove the greens from carrots ASAP–they will pull the moisture out of carrots.

Fresh, unpeeled carrots must remain moist, so the best way to store fresh carrots is by placing them with the water in a fridge. If you grow your carrots yourself, or buy them fresh at a farmers market, put them immediately into a baggie and put in your fridge. To prevent the spoiledness of freshly-cut carrots, you should keep them in a plastic bag in your fridge.
To keep condensation out, wrap the carrots in paper towels, and then put the bags into a cooler, or use perforated plastic bags. When you are storing, you will want to take your Carrots out of their plastic bags to prevent mould formation when they sweat. When you store carrots in plastic bags or containers, it helps the carrots to keep the moisture and also keeps the air out so that the carrots do not spoil.
Keeping carrots stored in an isolated area or air-tight container will increase shelf life significantly. Cooked carrot scraps can also be stored in the freezer just as well, in an airtight container. You can dry or dehydrate carrots if you are short on freezer or fridge space.
To keep carrots in your fridge for long periods of time (say, longer than three days), I find keeping them in a sealed, zip-top, or vacuum sealed bag is most effective. If you are not going to use your carrots for several days, then the best way to keep them fresh is by keeping them in your fridge and inside of an airtight bag, such as a zip-top bag. If you are looking to freeze raw carrots, I suggest cutting them into rounds, freezing them on a tray, and storing in an airtight bag. Some folks also recommend keeping the carrots in a bowl (or sealed, airtight container) with pure, filtered water in the fridge.
If the carrots are in the fridge, either be sure that no humidity is building up, or just leave them soaked in the water. If keeping the carrots at room temperature, then it is important that they are kept somewhere with good ventilation to prevent the moisture from building up and causing the carrots to rot.
If stored in this way, in a dark, cool, well-ventilated place, the carrots will last for 5 to 6 months. If you are storing them out of your fridge, put them in your root cellar, or a room of your house that stays under 40F, so they last a little longer.
Another option is simply leaving carrots stored this way in the soil, and covering with mulch, or leaving if winter is approaching. You could simply cover newly harvested carrots, when they are still underground, with mulch and leaves right before winter.
While a refrigerator is definitely best for keeping fresh carrots, you are perfectly fine to keep them on your counter, in your pantry, or even a root cellar. As tough as carrots are, they will wilt, turn brown, and spoil if they are not stored correctly. Such carrots are not unsafe to eat in any way, but it is an enormous pain to peeled them, and they just do not taste all that great. If you are looking to purchase carrots and consume them over the course of 3-6 months, you could simply put the carrots into a container with some sand.

Chopped carrots (such as baby-cut carrots or carrot sticks) last the longest if kept immersed in a container with a tight lid filled with water. Follow these guidelines, and your carrots will remain firm and crisp for up to four weeks. Just make sure you replace the water every four to five days, or your carrots may become sloppy before you get around to them. After draining the remaining cooked carrots, thoroughly pat them dry and place into a freezer-safe bag, pushing out any air.
How do you know if an organic carrot is bad?
When carrots begin to go rotten, they become floppy and squishy. However, this does not imply that they are useless. If they feel slimy, though, they have perished and should be thrown out. Smell. If carrots are stored in a dark, cool, well-ventilated place, the carrots will last for 5 to 6 months.
