If the eggs have never been refrigerated, they can hang out on the counter, or in another cool place, for about a week. But once refrigerated, eggs have to stay refrigerated or kept out of the fridge for 2 hours only. To prevent spoilage, store eggs in the refrigerator where the temperature is between 40°F and 45°F 4°C and 7°C.

One of the noticeable differences between Europe and the U.S. is eggs are not stored in refrigerated cases. One method for storing eggs without refrigeration is to immerse them in a cold pan with 1 tablespoon white distilled vinegar or sea salt. Another method for storing fresh eggs without refrigeration is to dry them out with a paper towel, and then cover with plastic wrap.

You will need to store farm-fresh eggs differently depending on what selection you choose. Unwashed eggs have a protective coating called a shell, also called the husk, and you can store these eggs on your countertop. Fresh eggs have a protective covering which helps them to keep for up to five weeks in a refrigerator; after boiling, the protective layer is removed and the eggs only keep for a week in the refrigerator. Although eggs can be kept for up to one week at room temperature, a general rule is to refrigerate as soon as possible.

You can let a newly laid chicken egg sit out at room temperature for a month before refrigerating. Freshly laid eggs can sit at room temperature for at least a month before you have to start thinking about moving it into the refrigerator.

You can leave eggs out at room temperature for about two hours, or an hour if it is 90 degrees or warmer, before you need to start worrying, according to the Egg Safety Center. USDA experts advise that never leave eggs exposed to air temperature for more than 2-3 hours. In fact, fresh eggs can survive up to three weeks without refrigeration as long as they are stored correctly in a cool, dry place.

Fresh eggs are best quality to eat for up to 3 weeks after the date of purchase, unrefrigerated, when stored correctly in a clean, cool, dry place. Once eggs are refrigerated, they can be stored safely in a cooler for another three to five weeks past their use-by date. The Incredible Edible Egg says eggs kept refrigerated last for approximately four to five weeks past their pack-by date. Most containers will have a best-by date stamped on the packaging, but generally, you can count on eggs staying fresh for 4 to five weeks when kept cold at all times.

Raw eggs can last for seven days refrigerated, but should remain in their cardboard cartons and not be placed in the cooler section. Raw eggs that have been removed from the shell must be refrigerated in tightly covered containers. If you cracked the egg while driving home, break into a tight-topped container and store it in the refrigerator up to 2 days.’

There is an exception to this rule: If you have to wash an egg in water, it is fine to keep your eggs straight away in the fridge — that is because you removed the blossoms from them (more on that below). If you decide to put your eggs in the fridge (either because you cleaned the eggs and removed the bloom, or because you want to keep them cold), they will be fine for up to six months in the fridge- we would not keep them longer than that. If you have a home hen house, eggs can be stored at room temperature (ambient) since they were not cleaned, and they will still have their blooms intact. If you are okay with the eggs having a shorter shelf life, you can store them on your countertop for 2-3 weeks without issue.

Temperature fluctuations are a risk with eggs, so if you left them overnight in a vehicle, you are best off throwing them out. According to chefs and bakers, unless your kitchen has extreme temperature fluctuations, you cook eggs carefully, and you wash your hands after handling eggs, eggs left outside overnight should be safe to eat.

Pre-refrigerated eggs left on a countertop at room temperature will perspiration, creating an environment for bacteria to grow. The eggs are nearly immediately refrigerated to avoid introducing any new bacteria (salmonella thrives at temperatures of 40-140degF). However, the cleaning process damages the eggs natural defense qualities, so in order to ensure that eggs are protected against any future contamination, eggs should always be refrigerated.

To further protect against contamination, US egg producers are also required to wash eggs (right after being laid, and prior to being sold to market) with hot water, and dry and mist chlorine over the eggs. This is done to prevent contamination that could negatively impact other eggs quality and freshness. To decrease your chances of Salmonella bacteria in eggs, consider buying pasteurized eggs, keeping them refrigerated, and always making sure that they are cooked to a firm texture.

If you are experiencing a surplus of eggs, it is wise to refrigerate any fresh, unwashed eggs that you do not plan on eating right away. If you are saving the leftovers from a meal made with eggs, the FDA advises you refrigerate and use within 3 to 4 days. If you are keeping eggs at their recommended 40degF or lower temperatures, the FDA recommends using eggs within three weeks after you buy them.

However, those of us used to refrigeration of eggs may have trouble believing eggs stored at room temperature are safe for consumption. It turns out, eggs are refrigerated here in the United States because the U.S. Department of Agriculture requires eggs sold for consumption to be washed, processed, and then refrigerated before they ever make it to the shelves of stores.

Or, give them away to friends or relatives. Washed eggs should be refrigerated, and they last about two months in a refrigerator. Whether you keep your fresh, unwashed eggs on the counter, or you keep your washed eggs in your fridge, you are going to want some nice containers to keep them safe. Many backyard chicken farmers purchase sturdy plastic or glass egg holders for their fridges to help reduce the waste of disposable cardboard cartons. By the way, if you do not use reusable egg storage containers (like my favorite, from Amazon), you are limiting the amount of time that your eggs can remain fresh in your refrigerator. This means even fresh eggs need to be washed before using, and if even one egg in the batch looks bad, throw out the entire batch.

Can you leave eggs out overnight?

According to the Egg Safety Center, you may keep eggs on the counter for roughly two hours at a normal temperature or 1 hour if the temperature is 32 degrees or higher before you begin to become concerned. It would be safer to obtain a new dozen of eggs after 2 hours than to take a chance with the old ones.

How can you tell if fresh eggs are bad?

Simply put your eggs in a basin and fill it with cold tap water. They are fresh and suitable for consumption if they settle to the bottom and lie flat on one side. The big air cell that forms at the base of a damaged egg causes it to float. Throw away any eggs that are floating.

What happens if you hard boil a rotten egg?

Salmonella infection, which can result in diarrhea, vomiting, and fever, is the greatest risk associated with eating rotten eggs. By keeping eggs in the refrigerator, tossing out eggs with cracked shells, and properly boiling eggs before consuming them, one can lessen the risk of contracting salmonella.
