How Long Do Beets Last?
Beets can last between 3 to 5 days in the pantry while putting them in the fridge will increase the time up to 2 weeks if the leaves of the beets are removed and the beets are properly stored. However, cooked beets must be stored in the refrigerator and consumed within 4 to 5 days.
If you want beets to last longer in the refrigerator, prepare them for refrigeration. In the freezer, opened canned beets will last 1 to 7 months before spoiling if you store them properly. Cooked beets keep in the refrigerator for at least 2-3 days before they go bad if properly stored in the refrigerator under the right conditions.
Pickled beets keep for 6 to 8 weeks in the refrigerator and 5 to 9 months in the freezer before they go bad if stored properly under the right conditions. Beets can keep for almost a month (and longer if you picked them from your own garden) when refrigerated. If you store beets in the refrigerator along with vegetables, they can keep for about two weeks. Store plastic bags in the drawer of the refrigerator and you will have about three weeks to get the most out of your beets. Transfer the beets to plastic bags and remove excess air before sealing the plastic bags and placing them in the back of the freezer. If there is no space in the refrigerator, beets can also be packed in containers – a bucket or a plastic box or a cooler made of wet sand, peat or sawdust. If you don’t have a bucket of wet sawdust handy, freezing excess beets can be an easier way to store the ones you can’t eat.

In areas with mild winters and well-draining soil, leave beets in the soil for as long as possible. If you have a cellar or unheated garage that can keep the temperature low enough, you can keep your beets there.
