How Long Can You Keep Scrambled Eggs?
To put it simply, you can keep scrambled eggs for three to four days only in the fridge. Not just scrambled eggs, any type of cooked eggs. This is regardless of whether they are kept in their original form, or in an egg salad or a quiche – the shelf life is only three to four days.
If you are serving a buffet of scrambled eggs, you may want to keep them warmed in a steaming plate or in a two-tiered steamer at above 145 degrees F., so that potential harmful bacteria does not grow in the dishes. Scrambled eggs can be stored in a refrigerator for 3 or 4 days at temperatures between 40 degrees F. and lower. Scrambled eggs should be packed for storage within 2 hours of cooking, and they can stay 3 or 4 days in the refrigerator, or as long as 6 months in the freezer.

If you have any leftover scrambled eggs or eggs dishes, these will last 3-4 days in the fridge. If, say, you have lots of leftovers, or just want to make a big batch of scrambled eggs to save some time in the morning, freezing them does not change the taste of the dishes. Bacteria that can cause disease grow rapidly at warmer temperatures (between 40degF and 140degF). Casses and other dishes that include eggs should be cooked to 160deg F. You may want to serve eggs in a casserole or in a two-tiered pan if you are hosting a feast or buffet that is going to be more than 2 hours. You can quite easily freeze cooked eggs such as omelets, quiche, and cooked eggs, and then thaw cooked eggs such as omelets afterwards, with little or no difference in flavor or texture. Whether they are fried, fried, boiled, or whatever, the different types of cooked eggs have varying amounts of shelf life before they are unhealthy to eat.
