How Long Can Vacuum-Sealed Coffee Last?
Vacuum-sealed coffee can last for several weeks to a few months in the pantry, depending on the quality of the coffee and the conditions of storage. Generally, vacuum-sealed coffee can last for about two to three weeks at room temperature when stored in a cool, dry place.
While vacuum-packed coffee may last months, if not years, coffee in an opaque container goes stale much more quickly. As a general rule, frozen ground coffee can last up to two years, and maintain freshness, if the coffee has been vacuum sealed, but no longer than six months if not. Coffee that is stored correctly and sealed completely can last up to years and still be delicious.
While coffee definitely goes bad (as in, goes stale), properly sealed coffee stored in a dry, dark, cool environment can last a pretty long time. A vacuum sealed container might be your best option to keep coffee long term, and the good news is you will not break the bank. Coffee stored in a vacuum sealed container may last months or even years (depending on the coffee variety) when properly stored.
If vacuum sealed packages are punctured or opened incorrectly, coffee may need to be stored in a sealed container. Store grounds in sealed, airtight containers to remove the developing moisture inside of the vacuum-sealed bag.

Interestingly, without a vacuum seal, the whole roast coffee beans will be affected by freezing much more than ground coffee, since the whole coffee beans package will have more air in it (and thus, crystallization) than the tightly packed ground coffee package.
It is a safe bet to say that roasting coffee beans coming in nitrogen-flushed bags with one-way valves will keep them colder for a long time, than beans coming in vacuum sealed bags. If kept in a one-way-valved, nitrogen-flushed bag without opening, the entire coffee beans will stay mostly fresh for up to 12 months after roasting. Even if the coffee beans are used within one month after they are purchased, keeping the amount of air in the container at the absolute minimum ensures the final cup is nearly as fresh as the first. If stored in a non-transparent, airtight container, or a coffee bag with a seal, in a cool, dry environment, medium- to deep-roasted coffee beans can also stay mostly fresh for more than a month after opening the initial package.

In that respect, coffee grounds, instant coffee, and whole beans can still be good to use, even after they have passed their shelf life. Granted, coffee grounds can still be fine to use months after the expiration date (if sealed in a sealed container). They do not keep fresh quite as long as whole beans, which can still be pretty good two months later, when stored in a non-transparent, airtight container.
Whole coffee beans keep the aroma and flavor longer than ground beans, allowing you to buy and store larger quantities, while it may take you a little longer to go through a bag of beans that is opened. If they are still sealed in vacuum packs, green coffee beans can last several years, even when stored at room temperature. If you simply store green coffee beans in a plastic bag, without vacuum-packing them, or keeping them constantly humid, they will get moldy and spoil.
To answer this, when you vacuum-seal your coffee beans (even the ones that have been roasted) in a plastic bag with a one-way valve, you can expect to keep them fresh for at least one year. If you properly store freshly-roasted beans in your vacuum sealed container, in an environment that is not too moist, you will be enjoying freshly-brewed coffee for weeks. Vacuum-sealed packages of fully roasted coffee beans should last for approximately six months if stored correctly.

If you expect to store coffee longer than two weeks, package roasted coffee into Ziploc freezer bags, equal to whatever you would consume during the week, and take only one bag out of the freezer at a time. If you are going to consume the roasted coffee within two weeks, then the best (and easiest) method is simply to buy a sealed container (a metal tin or ceramic one with a lid) and store the container in a cool, dry area, such as the kitchen cupboard. Store excess coffee (of any kind) right after you are done with it, in a sealed, non-opaque container.
When you want to use the coffee that is been vacuum sealed and frozen, just unzip the bag and pull out just enough coffee as you are going to use it for a week or so, then seal up the bag again, then put it back into the freezer. If you have roasted enough coffee to consume over the next three days, there is no need to keep it sealed inside the foil bag. If you are storing or selling your coffee in foil-sealed bags with airlocks, it will keep fresh for up to one month inside the bag. Unless the package is sealed inside a sealed airtight container, you will want to avoid keeping your opened coffee in a fridge or freezer, as it may build condensation.

To ensure the longest shelf life of your roasted coffee beans, you should break up beans into day-to-day portions and store in sealed bags with zip-lock closures (such as these bags from Ziploc). When keeping your coffee for 2-3 weeks, you should store it in a sealed airtight container at room temperature. Instead of freezing your coffee beans, the refrigerator just makes them extra cold, causing them to condense and drive the oils up the sides, basically forcing the aging process into overdrive.
