How Long Can Ginger Last In The Fridge?
A whole, unpeeled ginger can last for about two months in the fridge but only if certain protocol is followed. Make sure to place them in an airtight bag before placing them in the fridge as it keeps the air and moisture out, preventing mold from growing on the ginger.
Just as you would gauge the shelf life of celery in your refrigerator, be aware that there are a lot of ways you can prep your ginger for storage, and it is all about how you intend on using it. While ginger has a relatively long shelf life, using the proper methods is important for keeping your ginger fresh, whether you are planning to keep it in the refrigerator, freezer, or on the counter, so that it does not spoil or get moldy. Fortunately, if you use the proper methods, ginger can safely be stored under several conditions that will keep it fresh for anywhere from one week to a few months.

If you would like to keep the ginger longer, you can make a paste of them and store them in your freezer. When I get a big bag of ginger, I will store a few of them in the fridge, but make a paste out of the rest of it and freeze for later.

Once you have stored the ginger root, whether you choose to refrigerate, freeze, or store in the pantry, watch for it as it approaches the end of its shelf life to make sure that it has not started spoiling.

For stored ginger, keep the root the way it is, do not peel it off and do not wash it, and put it in a dish or another outdoor container. Place whole ginger roots (whether peeled or not) into a plastic freezer bag, remove all the air, and freeze.

Peeled, crushed/minced ginger will spoil in just a few hours if stored in a pantry because of the loss of moisture and flavour. When using your ginger, and have some leftover peels or pieces for storage, put these into a glass jar with some dried sherry to prolong its shelf life.
If you use chopped ginger nearly daily, cut up lots of it and store it in a sealed container that fits into a glass jar. You can store ginger either at room temperature or in the fridge in an airtight container, leaving the skin on, to maximize gingers shelf life. To prolong gingers shelf life, you are best off keeping raw roots in their uncorked, brown skin intact in a sealed brown bag in your vegetable drawer in the fridge.
