As a good practice, it’s always best to let the curry cool and then move it to the fridge to extend its shelf life. For this reason, it’s always best to cook the curry first and then wait for it to cool before transferring it to the fridge.

Allow the curry to cool completely before placing it in an airtight container, otherwise the moisture inside will create a suitable environment for bacteria to grow. Do not leave curry for more than 2 hours at room temperature, as 40 to 140 degrees Fahrenheit is the most favorable temperature for bacteria to grow, and bacteria is more likely to contaminate curry left on the lane. Curry left for more than 2 hours at room temperature should be thrown away as it is likely to be full of bacteria and can cause many health problems if consumed.
