Hard cheeses like cheddar can be kept longer outside the refrigerator, up to eight hours at room temperature because they contain less moisture. Hard cheeses like cheddar and parmesan will keep longer at room temperature, up to 8 hours, because of their lower moisture content.

Hard cheeses such as cheddar, swiss or gouda can be stored for a long time, even weeks, without refrigeration. Once opened, hard cheeses like cheddar and Swiss stay fresh in the refrigerator for three to four weeks, while softer varieties like ricotta, brie, and belle paese last about a week or two. Mold usually cannot penetrate very hard and semi-soft cheeses, such as cheddar, Colby, Parmesan, and Swiss. If you notice mold on a hard cheese, it’s usually safe to cut off the moldy part and eat the rest, as the spores may not be spread throughout the cheese. If cream cheese becomes sticky or too soft, it may contain mold or bacteria. The most common form of spoilage in cheese is mold, a fungus that spreads through spores rather than bacteria, and mold can also grow in the refrigerator.

If there’s mold in the refrigerator, you can tell rotten cheese right away. Even with mold, it’s safe to eat “expired” cheese, as long as you cut the mold away, it will still smell good. This means that if the cheese is stored in the refrigerator, it will dry out, causing the cheese to store faster than if it were wrapped in parchment paper in a cool, dark cellar.

Adam Brock, director of food safety, quality, and compliance for the nonprofit Dairy Farmers of Wisconsin, tells Bon Appetit that hard cheeses can be stored for 4 to 8 hours, possibly even longer, without degrading quality. Hard cheeses like Parmesan can also be stored safely for 24 hours, Marianne Smukowski of the Wisconsin Dairy Research Center told Bon Appetit. Soft cheeses like brie and camembert can be stored at room temperature for up to 4 hours, according to food safety experts at Clemson Universitys Cooperative Extension. However, your cheese may start to dry out and deteriorate after four to five hours at room temperature.

If you’re making a cheese platter with expensive cheeses where flavor, aroma, and texture are key, it’s important to let the cheese rest at room temperature for at least an hour before serving. Dry, firm, and less acidic grated cheeses such as cheddar, dry mozzarella, and parmesan can last longer than their dry, unripe, moist counterparts (brie, cottage cheese, fresh mozzarella, ricotta, queso blanco, and others).
