Although the USDA advises cooking raw chicken, the USDA advises that you should avoid keeping raw chicken in your refrigerator for at least two days. According to USDA, raw chicken can last in the fridge only for one to two days before you have to either cook or freeze it. The general rule of thumb is that chicken that is been thawed while it is still raw will keep one to two days in the fridge. If you are defrosting your frozen chicken in your fridge, defrosted chicken may keep for another 1 to 2 days before you cook it.

Just be sure to move the frozen chicken out of the freezer into the refrigerator at least one day before cooking. If your used-by date for the chicken is now, you probably will have to hold onto it for another day at most. A chickens use-by date does not tell you whether or not the chicken is still fine, much less whether or not you will be allowed to toss it out. While unpacked chicken (which we buy whole or chopped up in pieces from a butcher shop) may last for three days, you are best off keeping it no longer than two days. The US Department of Health and Human Services says a raw, whole chicken may keep for this length, but if a raw piece is cut, it may keep one to two days in the refrigerator, but just nine months in the freezer. A freshly-caught chicken can last for one to two days when stored in the refrigerator, and up to a year in the freezer. You can still extend your shelf life of cooked chicken for a year or three by placing it in the freezer at temperatures below 0 degrees F. Bacteria can begin to flourish in temperatures over 40 degrees, so keep your chicken below this temperature to prolong its shelf life.

If you are safe, then you need to either continue cooking your meat (use it in just a couple of days, or ice it), or put it into a freezer bag and store it until you are ready to use it.

Once cooked, let the chicken/turkey cool down, wrap tightly in cling film for two hours, and put on top shelf in your freezer. To store chicken in the refrigerator, put it in a sealed ziploc bag, or wrap in plastic wrap, and then place in a sealed container. On the day you plan on eating the chicken, take the chicken out of the freezer and put it into the fridge in the first part of the morning.

During the safe two-hour window to put the raw chicken in the room temperature, make sure you cover your raw chicken with a cover or plastic wrap to keep it from getting contaminated from air in your surroundings. Whether you roast it, make nuggets and patties, buy a ready-made rotisserie, or make your own KFC-style homemade oven-roasted chicken recipes, the leftovers should keep for three to four days in the fridge, giving you a bit more shelf life than you would have with a raw bird. Baking or grilling pieces of chicken will keep for four months in the freezer, the nuggets and patties for one to three months, and one covered with sauce or gravy may still be good six months after freezing.
