How Do Electric Stoves Work?
Conventional electric stoves come with a thick coil of wire referred to as the heating element. When you turn on the stove, electricity flows through this element, raising its temperature and heating it. Your pan sits upon this element, usually hidden underneath the surface of a stovetop.
Each heating element on your electric stove (usually four or five) is connected to its own control switch.
When the power is turned on, alternating current flows through copper heating coils installed under the flat glass or ceramic surface of induction cookers. Electrical current travels through each leg, and if the leg collides with the built-in electrical heater component, heat is generated.
How do the metal coils work?
The electrical resistance heats up to form a hot incandescent metal coil that transfers its heat through the glass ceramic by infrared energy and to the glass ceramic by convective heat. In a smooth electric hob, the coils are placed under a single plate of thermo-hardened glass-ceramic material that covers the hob. However, most modern electric hobs are radiant burners, with coils placed under the ceramic surface for better heat distribution.
Heat is transferred directly from these coils to your tools. Electric ranges may have coils exposed or hidden under a glass ceramic plate that covers the surface of the hob. Halogen electric hobs are similar, except that the heating elements are rings of halogen light bulbs under glass rather than electric coils.
Electric stoves VS induction hobs
Electric stoves are equipped with coils that heat up and transfer heat to the pans by conduction. On the other hand, in induction hobs, heat is generated by the cookware itself using electromagnetic energy.
The direct flame of gas grills can heat the cookware faster than the heating elements of electric stoves. More heat goes into cooking and less goes into induction cookers, pans and the surrounding air. It takes some time for the heat to transfer from the burner to the cookware, which increases the cooking time.

Heat is transferred from the burners to the pots, heating both the pot or pan and the food inside. Because the heat is generated in the pan itself, most of it (about 85%) stays in the pan, cooking slightly faster than gas stoves and much faster than electric stoves. Electric burners are flat so the heat from the burner, spiral or smooth, comes into contact with the bottom of the pot.

Do induction hobs heat up your kitchen?
Relatively little heat is lost to the air, which means that induction hobs don’t heat up your kitchen like gas or electric hobs, which is a plus in summer or in a crowded kitchen.
