How Do Gas Ovens Work?
With a gas oven, the food is cooked on a burner which releases a constant stream of natural gas, which is ignited. To operate, gas ovens have an in-built spark generator or a pilot flame that lights the gas released through the burner on fire.
Today, gas stoves use two main types of ignition sources: stationary ignition and electric. Some gas ovens have an indicator light that stays on and turns on the burners as needed. If a constantly burning pilot flame is used in a gas oven, this will cause the gas to ignite.
What happens when the furnaces are ignited?
When these furnaces are ignited, the natural gas can pass through the device where it is ignited by a constantly burning pilot flame. Gas ovens require a constant supply of natural gas to operate: the gas is ignited by a spark generator or a small pilot flame, depending on the model.

The furnace ignition system
After applying the gas, you must press the ignition button to activate the spark generator inside the gas oven – this will create a spark that will ignite the gas and ignite the burner. The furnace ignition system should automatically open the gas outlet valve, which then turns on and begins to heat the furnace cavity. Then, when the temperature drops, the flame should re-ignite and start heating the oven.
An electric oven will maintain your temperature, which means you don’t have to turn on and turn your food to cook evenly. A gas oven retains heat longer than an electric oven, so it can be used more effectively as a heater after the thermostat is turned off.

Clearly, appliance manufacturers are concerned about safety when they release combustible gases into your home, so there are a few things that need to happen with both styles of ignition before the oven valve releases gas. What happens in this type of ignition system is that a thermostat or electronic control switches power to the oven and gas valve ignition circuit, which are connected in series (one after the other).
As soon as the set temperature is reached, the controller cuts off the power supply to the ignition circuit, causing the igniter to go out and the oven safety valve to close, shutting off the burner flame. As long as there is electricity flowing through the igniter and the igniter is drawing sufficient current, the oven’s bimetal safety valve will remain open and open, allowing the gas to flow.

If the flame switch sensor is not hot enough, the flame switch electrical contacts will remain open, preventing power from being supplied to the oven safety valve and thus preventing the flow of gas to the oven burners.
This is because, unlike in the past when most gas ranges and wall ovens used separate igniters, modern gas ovens rely on oven safety valves to prevent gas from reaching the burner unless the igniter is red and produces enough heat to ignite. When the igniter reaches the gas igniter, it is gas.
When the knob is turned, the electric current heats the stove pilot, opening a valve that lets gas pass through the burner tube. The increased current in the circuit heats the bimetal inside the oven safety valve, bending it just enough to allow gas to flow into the burner assembly.
Pilot ovens use a device called a thermocouple, which uses the thermoelectric effect to convert heat into electricity, which causes a valve to open and release gas. Pilot surface ignition burners work much the same way, but don’t need a thermocouple because the valve isn’t automatic, and the user manually opens the burner valve in front of the furnace to release the right amount of gas to get the desired heat.
