How Do You Know If Rice Is Spoiled
If you are going to check out whether rice is spoiled or not, taste and color are good indicators. The Brown or green color of the rice is a sign that your rice is spoiled. If the rice smells like a fish, you may discard it. Spoiled rice may have a bitter and rancid taste.
During the early hours when rewarming, you must notice a smell of rice that is spoiling. Spoil rice, and throw it out. If the remaining fried rice has developed a foul smell, taste, or appearance, or if mold appears, it should be discarded. To maximize shelf life and ensure safety and quality, store fried rice in an airtight container. Once you have opened the bag or container, be sure to seal the remaining rice securely to keep it away from outside environments.
You can keep brown rice like this for around a half-year, but make sure you seal it well and keep it out of moisture and insects. Storing it in the fridge may extend raw brown rices shelf life slightly, and will be usable for about one year. Uncooked white rice will be eatable for years if you keep it frozen, but you are better off using cooked rice for 4 to 6 months. Cooked rice in the refrigerator will last for less than a week, but frozen rice will last six to eight months in your freezer before you can eat it again.

Refrigerated rice should keep up to one week, while frozen rice lasts for six months – beyond this point, quality starts to degrade. For instance, you would want to store cooked rice in a refrigerator, but uncooked can keep longer in the pantry. If you know that your rice will likely be sitting in the refrigerator for more than a couple days, then freezing is best. Be sure to never freeze your rice longer than three months, so that you do not get freezer burn, which makes your rice dry and tough.

Even a day or so later, the rice in the refrigerator is going to get tough, but heating it up again rejuvenates the rice. By now, your rice has probably been in the refrigerator for at least four days, and is not any more safe to eat.

If your rice smells like fish, you may want to throw out your rice, which would be unsuitable for eating the following day when cold. It is okay to discard rice that has developed an odd odor, because no one likes eating rice that smells. The best method is to sniff and examine your cooked rice; discard all the rice with a strange odor or look, without tasting your cooked rice first. If you have left your rice at room temperature for four hours, it might have none of those signs, and it may seem just as good as the fresh rice.
Never heat rice more than once, nor keep it out at room temperature too long, in order to avoid the growth of spores. No, heating cooked rice prior to consumption does not kill the spores, nor does any toxin that has already been produced, which could still cause illness. Any cooked rice that has been stored improperly (5degC – 60degC for a long period of time) would still be unsafe to eat.
Improper, unsanitary handling of cooked rice also increases your risk of food poisoning by some bacteria, leading to stomach pains and cramps, nausea, vomiting, and diarrhea. Cooked rice goes bad when it is improperly chilled, stored, or heated, and bacteria may cause food poisoning as a result. Mold or fungus contamination also reduces the nutritional quality of the prepared lives because fungi growing on the rice are using it to meet their nutritional needs.
If there is change in color in rice, then it is probably damaged from mold, bugs, moisture, or rotting. Stale rice may have been contaminated by harmful bacteria when rice starch has not been properly digested. If your rice has a slightly funky, sour flavor, that could be a sign that bacteria are already growing in your leftovers, so you are better off throwing it away.
Give your refrigerated rice a good visual inspection before heating, because if it is been contaminated, mold can form in just one day after you put it in the fridge (been there). Be sure to check your rice always before you cook and to put it back into the refrigerator within two or three hours after you cook it, especially during hot weather. To lower the risk of food poisoning, be sure to chill rice for one hour after cooking, and store properly in a refrigerator before eating. It is totally safe to leave it like that for several hours, but you should keep it ten to twelve hours.
For maximum storage, cooked rice should be kept in a freezer only, at zero degrees F., using either a sealed container or microwave-safe plastic bag. Storing cooked rice at zero degrees Fahrenheit certainly extends its storage time up to six months without harming its quality, but will stay safe beyond this time. Normally, you do not have to keep your cooked rice in a freezer, but doing so may help extend its storage time. If you are looking to reduce contamination, uncooked rice may also need to be placed in a refrigerator or freezer to extend shelf life.
For a two-fold safety net of keeping your uncooked rice cool (if you live in a damp environment, or are susceptible to bugs or other pests), you may want to store your grains refrigerated or frozen in a sealed container, just to be sure. If you are cooking rice in big batches, keeping it stored in an airtight container and freezing it is a great way to reduce the prep time of meals and eliminate food waste. Freezing cooked rice is a good way to make sure that you are not letting any of the leftovers turn rancid in the fridge, and you can easily defrost it at any time to use for meals.

Dried white rice can last for up to 2 years when kept at room temperature, whereas brown rice lasts for only around 6 months. After this, brown rice starts going bad, something which is easily determined as it becomes rancid, oily, and discolored. You can immediately tell when brown rice is bad when it is not cooked because it smells and becomes oily to the touch.
Can you get sick eating old rice?
Because leftover rice, pasta, and other foods contain a bacterium called Bacillus cereus, experts advise against storing them improperly. The bacteria create a poison when heated and left out for too long. And rice isn’t the only crop affected by this.
