Restaurants may hold the baked potatoes in the heated drawer with a rack filled with water at the bottom. You should wait for about 30 minutes before you can use them. To warm them, place the baked potatoes on the rack or a serving dish to cool.

In restaurants, the baked potatoes that have been prepared beforehand are kept hot until served to customers. Restaurants keep their baked potatoes warm by placing them under an oven light. You may be cooking more than one tray of potatoes at a time, so put as many potatoes into the oven as you have space. Once internal temperature is 185degF or higher (210degF is ideal), remove the potatoes from the convection oven, using one hand using the glove, place each warm potato into the foil and wrap. Once baked, you can grab the potatoes using a warm mitt, place each one into a square of foil, then wrap.

Once the potatoes are done baking, take them out of the oven and let cool fully. If you have to bake a second batch of potatoes, just roast those, and then put those into a cooler with your potatoes. If you keep a cooler closed, a second batch of potatoes can remain hot for 6 hours.

Turn potatoes over and roast, ununcovered, until potatoes are soft and lightly browned, about 25 minutes. Turn potatoes over midway through cooking to prevent the bottom from browning, where the potatoes touch the rack in the oven. Prick potatoes with a fork prior to roasting to reduce cooking time and to avoid bursting.

When you are baking many potatoes at once, select potatoes that are of a consistent shape and size; they will cook evenly and finish cooking simultaneously. Consistency is important when baking several potatoes at one time.

Restaurants roast their potatoes in baking boxes as the process takes only about 10 minutes. In restaurants, potatoes are baked in a special oven called the baking box. Baking is okay as long as you plan on eating your potatoes immediately, but using foil to keep your potatoes for hours at a time is not a great idea, as germs may grow on the foil and could make someone sick while eating their potatoes.

Just like a warm loaf of bread, you are going to put each potato in only a warming surface, covering it up until you are ready to serve it to all of your guests who are staying back. Rinse and scrub (I use a stiff-bristle brush) under running cold water with each potato, since you are going to eat the skins off of these perfect potatoes. Pierce each potato thoroughly with a fork or sharp knife, four (4) times each side, about 1 inch apart (this will let steam escape while roasting).
