Sweetened condensed milk and evaporated milk are much like similar in consistency but not in taste as sweetened condensed milk contains a lot of sugar in it and is used for preparing cakes and desserts but evaporated milk is sugarless and is used to make tea, coffee, and sauces.

Many recipes for pumpkin pie call for evaporated milk, and I frequently get asked whether it is possible to substitute sweetened condensed milk for evaporated milk in the same recipe.

If you have sweetened condensed milk, you can substitute a one-pound can of it in place of a cup of evaporated milk and one cup of granulated sugar. The reverse is true, you can replace evaporated milk with sweetened condensed milk and add the sugar. You can replace evaporated milk with 1 1/2 cups of cream or half-and-half (or some combination thereof). If you are lucky enough to have both cream and normal milk, blend half cream and half milk and use it instead.

All you need to do for this option is to mix 9 ounces of your powdered milk with a little warm water (1/3 cup, to be precise) instead of every condensed can of milk. If you want the condensed milk, but have just the evaporated, you can use that in place of the extra sugar in the recipe.

That said, there is an exception, and it is that you can make sweetened condensed milk–or a close approximation thereof, at least–if you have a can of evaporated milk handy. If you do not have access to grocery stores selling pre-made sweetened condensed milk, and cannot make it yourself due to a lack of available cows milk, then you are going to need a substitute.

Evaporated milk and sweetened condensed milk are not the same consistency, so you cannot substitute directly with the same quantity of evaporated milk in the recipe. Because condensed milk contains sugar, it is important to carefully read your recipe to understand if you want evaporated milk or condensed milk. The sugar from the natural lactose is concentrated in evaporated milk, so you may have to cut back on sugar when using it in recipes as an alternative to fresh milk.

Fresh milk goes through a vacuuming process, which evaporates more than half of its volume of water, and concentrates the nutritional parts of milk. Any extra water inside milk is also removed in refining, leaving behind just a concentrated product of milk. Periodically stir milk/sugar mixture for approximately 1 hour, until reduced to approximately one-half of the original quantity.

Whisk together full fat coconut milk and sugar in a pot, bring mixture to just under simmering temperature, and then let mixture simmer for 30 minutes. Place 2 cups almond milk into the pot and boil on low heat until it is reduced by half (leaving you with 1 cup of milk).

The 2 cups of almond milk will add thickness and sugary flavour; however, the end result when using almond milk will not be quite as rich in flavour and texture. If you would like to avoid coconut flavors, but still get the dairy-free option, then use almond milk. While coconut milk can be used in place of milk for many recipes, it is worth noting that coconut milk has a decidedly detectable coconut taste, which may change the taste of your recipes.

Another dairy-free substitute is Oat Milk, and it is a replacement that can be used in most recipes calling for evaporated milk. If you plan on using this replacement, you can buy it at a local store, or you can make your own version. Soymilk can be used in many dishes, and while it does not have quite the same flavor as evaporated milk, it is unlikely you will notice much difference after adding it to a recipe. While this kind of milk can be added dry to recipes, to create a replacement that is quite similar to evaporated milk, you can combine one cup with 1 1/2 cups of hot water; slightly less than usual.

Rice milk does not have the same high-fat content as dairy milk, however, you can use it for most desserts and baking recipes. Evaporated milk can withstand high temperatures without coagulating, making it a good choice for recipes that want a creamy texture for thick sauces, puddings, and Crockpot recipes. The intense, high-heat processes required to produce evaporated milk, and also to render it in a tin, does not make for a pleasant replacement to fresh milk for drinking on its own. For that reason, condensed milk is generally used in desserts and beverage recipes only, in order to give sweet, creamy, (you guessed it) milky flavours, without watering down the final products.

When mixed with an acid like lemon juice, condensed milk will create a texture similar to soft cream cheese, a blend that is occasionally used for making cheesecakes and cakes. The combination of the two ingredients creates a creamy, sweet taste, because the heavy moisture of cows milk is vaporized.

In the unlikely event you happen to have powdered milk sitting around your kitchen, you could even rehydrate powdered milk to make evaporated milk–it is not really even a substitute. Hemp milk tastes a bit sweeter and has a thinner texture than some other alternatives, so you might need to thicken it up with cornstarch or another thickening ingredient.

What happens if I use condensed milk instead of evaporated milk?

The taste and texture of evaporated milk and sweetened condensed milk are very similar. It is unlikely that you will get the same flavor or sweetness as you would with sweetened condensed milk if you substitute evaporated milk for it. However, the consistency will be similar. However, the evaporated milk won’t offer the same rich, creamy taste.
