Can You Use Bread Yeast To Make Beer
You can use bread’s yeast to make beer. The yeast will ferment the sugars and produce carbon dioxide. But the taste of the beer won’t be the same, and the yeast might not work as well as a brewer’s yeast.
The idea of using bread yeast in beer might make a lot of craft brewers cringe, but let’s take a closer look. Keep in mind that bread yeast will make a beer that tastes and looks very different from what you’ve brewed before.
Bread yeast produces alcohol, but according to the American Home Brewers Association, bread yeast beers typically can’t contain more than 6 percent alcohol. This percentage is in the range of most beers, but if you want a very high alcohol content, baker’s yeast is unlikely to bring your beer to that level. Bread yeast tends to ferment alcohol to around 8% without much effort, which is a good acceptable range for beer, but when trying to get alcohol above that level, bread yeast will struggle, very often stopping at around 9% or 10%.
After all, brewer’s yeast was used in the past to make bread, but modern baker’s yeast is designed to withstand the high osmotic pressure of the dough. It is not uncommon for the best-known beer and bread yeasts (especially those of the genus Brettanomyces) to produce alcohol directly from beer wort and bread dough, regardless of aeration.
Different strains of yeast are known to have unique characteristics when used to ferment beer despite being the same species. Some styles of beer derive their personality from the yeast used to ferment them and the distinct flavor they produce. Some wine yeasts also have aromatic qualities that make them ideal for fermenting one type of fruit over another. Many are grown over time to produce something like an excellent wine yeast.

Because both baker’s and brewer’s yeast are two strains of the same species (Saccharomyces cerevisiae), you can use baker’s yeast entirely as brewer’s yeast. Although brewer’s yeast is mainly used for baking bread and brewer’s yeast is mainly used for making beer, you can substitute them for each other. If you can’t find brewer’s yeast, you can use brewer’s yeast instead, although the beer will taste different. Whether you are planning to bake yeast bread or beer yeast bread, you can replace it with an equivalent amount.
If you want to make bread or beer with the same type of yeast, you will most likely turn to active dry yeast. Most homebrewers will tell you that yeast, the stuff you use to make bread, is not good for making beer. While you may not make perfect bread, you should use brewer’s yeast because brewer’s yeast releases more alcohol than carbon dioxide.
If you like trying new things, you can try using brewer’s yeast in bread making and compare the difference. Don’t start this experimental brewing expecting you to pour the same beer you made last time using brewer’s yeast. You should be aware that your cider or beer will not taste as good or clear as the beer you are used to brewing if bread yeast is used in the brewing process. You can use wine or brewer’s yeast for baking, but be aware that you may end up with an alcoholic, possibly bitter, taste. Bakers don’t need alcohol in their bread, but they do need more CO2, so with brewer’s yeast you’ll end up with a much more carbonated beer.
The main difference between brewer’s yeast and baker’s yeast is that brewer’s yeast produces both alcohol and CO2, while brewer’s yeast produces large amounts of CO2 and negligible amounts of alcohol. I think you can bake very heavy bread with brewer’s yeast! Some online research tells me that brewer’s yeast doesn’t release the same amount of CO2 as bread yeast, so you end up with a thick loaf (CO2 bubbles up in the bread, making it fluffy. Especially if you’re a brewer, I can wholeheartedly recommend using dry yeast for baking bread.
I often look for ways to save money on home brewing, and one way I’ve found is to reuse yeast between brews. In nearly 20 years of homebrewing, I’ve experimented with some weird stuff, including brewing beer with sourdough, but I’ve never tried brewer’s yeast fermentation, mostly because of the advice not to. Given the abundance and variety of quality brewer’s yeast these days, and my personal dislike of yeast-fermented beer in this xBmt, I’m not going to change my brewing methods anytime soon. With all the good intentions in the world, I often end up with yeast stored in the back of my beer fridge that expires much longer than what is listed on the back of my beer fridge.

While the yeast used in cooking is also Saccharomyces cerevisiae and can ferment beer, it is often said that using them can cause off-flavors. If you’re trying to bake sourdough bread, you might be a little disappointed with using brewer’s yeast because the bread isn’t very sour and doesn’t have the moisture of baked sourdough bread.
It’s widely believed that baker’s yeast only survives very low alcohol levels, so it won’t work with beer or wine with higher alcohol content. Baker’s yeast is often used when bakers want to add more flavor to their bread, but active dry yeast such as Red Star Baker’s yeast can also be used instead.
Brewer’s yeast is also grown specifically for wort brewing and also contains essential nutrients. It’s often said that beer makes wort, yeast makes beer, and as any brewer knows, different types of yeast have different properties. Only brewer’s yeast can meet the requirements of brewing and baking. If you want the phenols, esters and alcohols that make Belgian beer so delicious, you need the right yeast.
How to tell if yeast is still active
To check if yeast is still active, add 2 teaspoons of dry yeast and a teaspoon of sugar to 1/4 cup of warm water. Mix everything well and wait a few minutes. If there isn’t any foam on top after a while, your yeast might be inactive.
Bakers’ yeast vs. brewers’ yeast
While making beer, brewers’ yeast and bakers’ yeast act the same way. Both types will ferment and produce carbonated beer. Bakers’ yeast, however, does not carbonate the mixture as well as brewer’s yeast, despite producing the same result. Brewers’ yeast naturally contains chromium, whereas bakers’ yeast does not.
