Use a simple syrup made with honey as a sugar substitute in your vinaigrette, marinade, sauce, or cocktails, as you would with a simple sugar syrup. If you are short on granulated sugar, you can also substitute equal amounts of corn syrup for honey. One cup of honey could be easily replaced with a cup of brown rice syrup, since sugars are nearly of similar consistency and sweetness.
You can use a cup of yacon root syrup in recipes that call for one cup of honey. When using maple syrup as a honey substitute in sweet dishes, like lemon tarts topped with honey, be sure to stir in 1/2 cup of sugar along with 3/4 cup of maple syrup, in order to replace the cup of honey. There is also synthetic honey, according to HHU, that is made from acid hydrolysis of sugars, with a small amount of starch syrup added in for texture.
