It is possible to refrigerate sushi rice after they are cooked, but only if they haven’t been seasoned yet. Whether they’re brown or white, place your sushi rice in an airtight container before keeping them in the fridge. This way, they’ll last in your fridge for up to five days. After that they can become gummy.

To store sushi rice, place it in an airtight container and refrigerate. Cooked sushi rice should be refrigerated for 3-5 days, but should be consumed within 2 days of cooking. Uncooked brown sushi rice can be stored in a cool, dark pantry or cupboard for up to six months, or longer if you choose to freeze, in which case it will keep for up to 2 years . Japanese short-grain white rice comes in airtight bags and is stored in your regular pantry for as long as you want. Keep rice in an airtight package or container to freezing to avoid freezer burn. After opening the leftover bag, transfer the rice to an airtight container and store it away from moisture.
