Pressure cookers need a certain amount of liquid to start functioning, whether it be water or broth. But you can also add in alcohol in your pressure cooker for it to function. It is completely safe to use in almost any recipe in a pressure cooker, whether it be beer or wine or any other type of alcohol.

You will notice that the pressure cooker will evaporate the alcohol depending on the cooking procedure. If the heat is not reduced, too much liquid will be released while the oven tries to maintain 15 pounds of pressure. When using a pressure cooker, there must be enough liquid in the pot to reach the pressure and cook the food properly.

You cannot use the Instant Pot or other pressure cookers without water, broth, or any other type of liquid. You can use the Instant Pot as a slow cooker, cooking with the steam valve open and without pressure.
