Some people recommend marinating shrimp longer, and up to eight hours can be enough with the right type of marinade. If you’re short on time, thaw the shrimp first to speed up the marinating process, as fresh shrimp absorb more flavor. You can store marinated fish in the refrigerator for up to 24 hours, but remember that you shouldn’t marinate fish for that long, especially if it’s a small piece and marinated with tons of salt and acid.
