You can get sick from eating lobster if it is not cooked properly or if it is contaminated with bacteria or other harmful microorganisms. Consuming undercooked or contaminated lobster can cause symptoms such as nausea, vomiting, diarrhea, and abdominal pain. Shellfish poisoning is caused by eating shellfish that has been contaminated by bacteria, or, more often, viruses. Diarrheal (or diarrhoeal) shellfish poisoning occurs by eating shellfish (such as mussels, cockles, scallops, oysters, and whelks) containing toxins. You cannot bake lobster to kill the Vibrio bacteria, though, which causes symptoms like nausea, vomiting, and stomach cramps. It is not a good idea to leave a lobster on your counter for extended periods, so consume it ASAP. Avoid doing this, as once a lobster is poisoned with saxitoxin, no cooking heat will be able to break down the toxic substances that are present within.
