In case you do notice anything wrong, you are better off taking no chances and simply disposing of the seeds. Yes, you can freeze chia seeds to extend their shelf life even longer, but you need to keep the moisture levels low, otherwise, you will get chia gel rather than crispy chia seeds when they are thawed. If you do not follow these recommendations, ice crystallizes within plastic bags and you get chia gel instead of dried, crumbly seeds. If you freeze moist, moistened, or washed seeds, you can expect to end up with chia gel instead of crunchy, dry seeds when they thaw. You can salvage seeds like this by freezing for one to two days, then cleaning it out after you thaw.

Chia and flax seeds should be stored in the refrigerator to prolong their lives, and to keep their volatile oils from going rancid or turning black. As I have mentioned, if you store your chias correctly, they will keep at good quality well past what is on the box. The shelf life of common chia packets is only as long as manufacturers advise that you should use the seeds. Often, the “best-by dates are 18-24 months after the package dates, but if stored correctly, chia seeds will last for months, if not years, beyond the “best-by dates marked on your packet. I think that even beyond the 3 year mark, chia seeds likely do not actually get worse in terms of spoilage, they probably simply lose a bit of their nutritional value.
