In this article, I will share with you various ways to tell if carrots are bad and everything you need to know about storing carrots. You will find many health problems that you will solve if you want to eat rotten, slimy carrots. In general, once your carrots are slimy and mushy, it’s best not to eat them, not only because they smell bad, but are bad for your health. Spoiled young carrots will smell bad and will also turn white like regular carrots or become slimy.
Once carrots begin to spoil, they will become slimy or even brown-spotted and should be eaten. It is important to remember that carrots spoil even quickly if there is moisture in the bag in which they are stored. If carrots are stored at room temperature instead of in the refrigerator, they can only stay fresh for up to 4 days. Leftover cooked carrots can also be stored in the freezer for the same amount of time in an airtight container.
I’ve found that to store carrots in the refrigerator for extended periods of time (like more than three days), it’s best to store them in an airtight, zippered or vacuum bag. You just need to wash all fresh carrots thoroughly and place them in a zip-top plastic bag before storing them in the refrigerator. Fresh, unpeeled carrots need to be kept moist, so the best way to keep them fresh is to refrigerate carrots in water.

Wrap carrots in paper towels to prevent condensation, then place in a bag in the refrigerator or use a perforated plastic bag. If you don’t remove the green leaves from the tops of the carrots, you may notice that they have dried out and withered after a few days in the pantry. As the carrot dries out, it loses its firmness and becomes elastic and pliable with skin changes. Condensation will get stuck in the bag, and the carrots will take on too much moisture and begin to rot, which will lead to the formation of slime on them.
You need to blanch them before freezing and don’t let them get too soft and mushy when thawed. Putting raw, uncut vegetables in the freezer is not a good idea, as low temperatures cause carrots to crack and damage their structure.
Carrots that have been well cooked should be frozen quickly to maintain their optimal freshness/flavor/texture. If stored in a warm place (rather than refrigeration), carrots can last up to four days. Cooked carrots are completely different and can only last a week if refrigerated. Carrots may still be safe to eat for up to twelve months, given that the carrots have not yet shown any signs of rotting.
If you only notice a few white stripes on a carrot, you can still eat it. If you see white redness on its surface, the carrot is still safe to eat because it is a sign that the carrot is dying and you need to eat it quickly. Keep in mind that a white blush is a sign that your carrots are about to die out, so eat them right away. After this time, carrots can still be eaten, given that they have not yet developed symptoms of spoilage.
Stored properly, frozen baby carrots will keep their best quality for about 12-18 months, but will remain safe beyond that time. If sliced carrots are stored in the refrigerator, they are safe to eat for 2-3 weeks. If your carrots are sliced or chopped, you can store them in the refrigerator and they will keep for 2 to 3 weeks.
Your refrigerator is usually warmer than the optimum temperature; however, there are some tricks to help keep carrots in the refrigerator for 2 to 3 months. The freeze times listed are for the best quality only – carrots that have been permanently frozen at 0 degrees Fahrenheit will keep indefinitely. It is very important to know when your carrots are safe to eat or how long organic carrots keep because if you don’t know what will happen if you eat low quality carrots, you will end up eating low quality carrots and may worsen your health.
