Can You Eat Eggs That Have Been Frozen
Frozen eggs are safe to eat as long as the shells are not cracked. They can be kept frozen for up to a year and can be used after thawing in the refrigerator. But if the shell is cracked during freezing, the egg must be discarded as it is not good to eat.
Frozen eggs are perfectly good just to defrost and eat, and as long as they are unbroken, you can store them in your refrigerator or basement just like normal without any special care. Frozen eggs of any form must be completely thawed before they are used, and they should be eaten only in fully cooked dishes.
If you have frozen whole eggs, then the shells should not be cracked, and they should be safe for consumption. It is possible to freeze uncooked eggs, however, you cannot freeze them in the shell because of the nature of their structure. Whether you accidentally freeze eggs, or want to store eggs to use later, they are safe as long as their shells are intact or removed, and that eggs are cool and handled properly when frozen.
If possible, avoid freezing eggs close to their expiration dates, as these are more likely to have any bacteria on their shells and might not freeze well. Before freezing eggs, be sure that they are clean and free from cracks, since having any can increase the likelihood that there are any bacteria on the eggs or inside them.
Also, you may want to either freeze eggs intact, or you can split yolks and whites before freezing them, in order to save some time. The yolks will not thaw as fast as the whites, so break them with a fork if they are still frozen. If you freeze the yolks the way they are, egg yolks end up being so gelatinous they are nearly impossible to use in recipes. You can also freeze only the whites of the eggs, or only the yolks, if you prefer, but egg yolks do not handle freezing very well, and they will develop a syrupy, gelatinous texture.
If you would like to freeze the entire eggs, crack open the shells and dump both egg whites and yolks into a plastic container. Just like cooked eggs, the white portion of the Deviled Egg turns rubbery in the freezer, so really, you just want to freeze the yolk mixture. If you do not intend on eating a cracked, cooked egg, keep it in the fridge right after you cook it.

If the shell breaks, bacteria may be trapped inside the entire egg, making it unsafe to eat, even if you prepare it after thawing. It is important to keep in mind that eggshells are porous, so any fluids that come in contact with the shell will leak out of the egg. It may seem like it would be a good idea to simply pop a whole egg in the fridge if it is going to expire before you are able to use it, but you should not do that, as the shell is likely to crack, or at least break, and this allows bacteria to get into the egg.
If an egg is intact, it is not going to expire, and it is pasteurized, eggs are okay to eat raw if you wish. You will still have to prepare your eggs correctly, and make sure that they were frozen before their expiration dates came, so you can make sure they are safe to eat. If an egg is cracked, but the membrane appears intact, and the egg is not clearly contaminated, you may still be able to use the egg, but either prepare it immediately, or give it to a chicken or a dog.
Also, you should leave the shells on and store eggs in a sealed container or in the carton so that germs do not grow. If you end up with more eggs than you can use in the weeks after buying them, you can crack the eggs from the shells and freeze them. You can re-boil eggs in their shells once thawed, but the texture of the yolk is altered by the freezing process, so opt for a firm-boiled egg you can slice into salads rather than soft-boiled eggs.

It is also a bad idea to freeze either hard-boiled or soft-boiled eggs, because when thawed, egg whites may turn rubbery and watery. It is best to avoid freezing whole eggs that have been cooked and eggs that have been cooked solid, because these will get stiff and watery when frozen. If you allow eggs to cool slightly, then you may be able to cook them as whole eggs, if you let eggs cool slightly, then you may be able to make completely normal scrambled eggs from them.
The whites will get rubbery, and the yolks can get powdery and chalky, making them unappetizing to eat after they are frozen. The white will turn rubbery, and the yolk may develop a powdery, chalky texture, which is why cooked eggs that are hard-boiled are not much fun to eat after they are frozen. Freezing unshelled eggs negatively impacts the texture, since egg yolks get thicker and more like gels.
Freezing/thawing eggs is likely best for omelets, since the chances of breaking yolks are higher in the thawing process. When you are ready to use your frozen eggs, move the quantity that you need into your fridge and allow them to thaw in the refrigerator overnight. Place the zipper-lock bag, or the amount of eggs you need, into a container of hot tap water, and allow the eggs, which have not been cracked, to sit for about five minutes to start the thawing process. Then, you are encouraged to put your eggs into a bowl filled with cool water as you wait to chill your eggs.

Also, if you ever find that you cracked more eggs than necessary for the recipe, or have any leftover whites or yolks, you can store cracked, uncooked eggs in a clean, covered container in the fridge for up to two days.
The shell does not provide adequate protection, and eggs within it will spoil more quickly than eggs that are stored correctly. Even if you followed all of the guidelines and a frozen egg was supposed to be fine for eating, if the frozen egg smells bad, throw it out rather than cooking it.
