You can eat eggs one day after the expiration date. However, you may not want to because they may not taste as good. The expiration date is the date when the eggs are no longer safe to eat. After that, the eggs may start to spoil and develop bacteria that can make you sick.

It does not hurt to learn a few things, though!If you are throwing out eggs simply because the date on the package says that your eggs are Expired 02/11/2016 — you are doing it wrong. Eggs are generally known to still be fine to eat well past their expiration dates. While some of you are very well aware that eggs really have an expiration date, there are others (like us) that are aware eggs do go bad one day or another, but find the expiration date to be somewhat unfathomable. That is, if you do not carefully monitor how long eggs are left in the fridge, they may completely spoil before you can use them. If you store eggs in the refrigerator, they are still safe to eat for three weeks past their expiration date. As long as eggs show no signs of spoilage, they may still be sold and are considered safe to eat past their sell-by date. Because of this distinction, you can safely use eggs to complement your favorite foods, even after their use-by dates expire, but do use them by the time they are used.

This means that even if you grabbed a carton of eggs with a sold-by time stamp, in theory, they can still be safely eaten for at least one more week. The sell-by dates typically end between three and five weeks, but if you adhere to this window, the U.S. Department of Agriculture says, your eggs are perfectly safe for consumption. The Expires-Or Sell-By dates should be set no later than 30 days after your pack date, putting eggs at four weeks by then. Use of a sell-by date or an expiration (EXP) date is not required federally, but can be required state-by-state, as defined in egg laws for the state in which the eggs are sold.

Fresh eggs are guaranteed to be good for at least 66 days from the date that they are placed into a carton, which is 3-4 weeks past the date that is typically marked on a carton. Raw eggs will retain good quality for approximately 3 weeks past the date on the carton that is listed as sell by, use by, best by, or expiration date, assuming continued refrigeration. Refrigerated, unshelled eggs will retain without substantial loss of quality for about 4-5 weeks past their sell date, or for approximately 3 weeks after you take them home. Fresh shell eggs can keep in their cardboard boxes in the fridge for 4 to 5 weeks past that date without any noticeable loss of quality.

After eggs arrive at the home, eggs may be stored refrigerated 3 to 5 weeks after they are placed in the refrigerator. Once eggs arrive at home, refrigerate eggs in their original cartons, placing them in the cooler section of your refrigerator, rather than the door. Once eggs are solidified, they must be refrigerated (in the shell) within 2 hours of cooking, and used within one week. The U.S. Department of Agriculture advises to always purchase eggs in refrigerated cases, because this is an indication they were stored correctly.

For transport, you should try to keep eggs in a refrigerator as soon as you wash them, if at all possible. Even if you do keep eggs in the fridge, it is always worth checking if they are gone by the time you are ready to eat. If you do not think you will be home for several hours after leaving the grocery store, consider keeping the eggs you bought in the refrigerator. Sometimes, you will not know whether or not an egg is safe to eat until after you have cracked it, or if you notice that it is several days past its best-by date, you may feel inclined to toss out an entire carton.

In 2011, the Food Safety Authority said consumers should not discard eggs right after that date, because some eggs can still be fresh after two days. Both the FDA and Egg Safety Center agree eggs are generally safe for weeks past their stamped dates. With appropriate storage, eggs may remain fresh up to five weeks beyond the carton date. As long as kept refrigerated at 45degF or lower, fresh, shelled eggs are safe for consumption for four to five weeks beyond the date of julian (the day that eggs are packed).

One way to determine a reasonable use-by date is to count backwards from the date your eggs were cleaned and packed, to four to five weeks. Regardless of how late they are, according to USDA data, the best time to store uncooked eggs in their shells is between three and five weeks. By law, eggs have to be delivered to their final consumers within 21 days from their day of laying, so the British get seven days to consume them. Eggs may be sold legally for up to one month past the date on the cardboard, at which point it is effectively illegal, but they are still perfectly edible for two more weeks, longer if hard-boiled and kept in their shells.
