Can Sour Cream Be Frozen
You can freeze sour cream for up to 6 months, but the texture will change considerably. Frozen sour cream can be best used in cooked dishes, like casseroles, soups, etc. When you freeze sour cream, it may not remain fresh like before. After defrosting frozen cream, it’ll have a lumpy or grainy texture.
Sour cream can successfully and safely be frozen and thawed to be used in cooked foods, like soups, casseroles, or baked goods, says Julie Garden-Robinson, PhD, R.D., LRD, a professor and Extension & Nutrition Specialist at North Dakota State University. For this reason, Julie Garden-Robinson does not recommend using thawed sour cream in recipes where you want the texture to be smooth, like dips, or in toppings, like on tacos or baked potatoes, which, she says, you should always use fresh. As a result, texture can be clumpy, she says, and liquid and solids can be separated when it is frozen. The types of flexible containers used for packaging sour cream are not designed to freeze well, and the expansions that happen in the freezing process can make them burst or break apart, Julie Garden-Robinson explains.
You can use your original containers, but I suggest using a high-quality freezer-safe container that has an airtight lid. If you are freezing the original unopened container, that is fine — just put it in the freezer the way it is. If you put your cream into the freezer near your containers expiration date, and are using the original container, you do not need to label it. You can place the pack straight into the freezer as if it came from the store, as long as it is not opened.
Once your dairy is frozen solid, take your frozen block out of its tray or canister and put in your refrigerator bag or container. If you wish to use a tray or a muffin tin, keep it in the freezer until the dairy products are frozen.
You can also freeze the sour cream in ice-cube tray for smaller portions; after freezing, pop out the cubes and store them in a freezer-safe bag. The texture will still be different, but a bit less dramatic than you would get from freezing frosted sour cream in its original container, since you cannot seal it up tight. Chances are, the texture will break down, and you will be left with only the ability to process sour cream in other dishes, but probably will not be able to use it as a topping on baked potatoes or berries.
You just need to remember that once frozen, you cannot use it to do things like garnishing baked potatoes, but it is still totally okay for baking and cooking. While the texture will be a little different, you will be able to use the thawed sour cream for numerous baked dishes, saving time and money in the process. If, however, you must freeze it, we would recommend using frozen, then thawed, sour cream only in cooked dishes, since it would be quite unappetizing in the form of raw, like as a sauce. If you put the frozen sour cream on a counter top, it will thaw more quickly, but you may be subjecting it to temperatures that encourage bacteria to grow.
While you can freeze sour cream in the original packaging, it is best to move it into a freezer-safe container so that it will last longer and not succumb to freezer burn. Unopened containers of sour cream can stay frozen for around one year, as long as it is been stored in the refrigerator all along, and you are freezing a few days before it expires. Always label and date your items in the freezer, and try to rotate it to keep an eye on what is going into the freezer.

For instance, stroganoff made with canned soups (which do contain emulsifiers) can freeze better than the traditional recipe for stroganoff. One way to get around this dilemma is to make a stroganoff with all ingredients but sour cream, and then freeze it; when you reheat your stroganoff, just before serving, stir in some fresh sour cream. Then, you are most likely going to run into the same issue again, in that you are going to have some cream left over, but that is when the freeze-option is gone (read about why, below). Once you freeze cream, you cannot separate it out right away, you need to thaw your original container, even if you just want one tablespoon.
You will want to make sure that the mug cannot tip over or lean, because otherwise, if it tips before freezing, cream could escape. Unfortunately, as with most dairy products like cream, there is a big risk of fat and liquid becoming separated as it is frozen. If you are planning on using the cream for making sauces, and you will only ever need a little bit each time, then dividing it up into portions right before freezing is a good idea.
The best way to answer this is to freeze a small amount of sauce that you bought (or made) and check out what it looks like and tastes like once defrosted. You might notice a similar phenomenon the first time you crack open a container of cream cheese.
