Can Sauerkraut Go Bad?
Sauerkraut can go bad but the time of its spoilage depends on its storage methods. An unopened jar of sauerkraut should be used before its printed date. However, an opened jar must be used within 1 month if kept in the pantry while it can retain its freshness for up to 6 months in the refrigerator.
If you love sauerkraut, it’s important to know when it went bad so you don’t eat foods that can make you feel nauseous. It’s important to know when to consume sauerkraut and seal it after each use, because if new bacteria gets on it, it can go bad right away.
One of the best ways to store sauerkraut is to store it in the refrigerator, as this will help minimize bacterial growth and minimize the risk of spoilage. If sauerkraut is raw, live, and unpasteurized, it should always be refrigerated, even before opening. Technically, a can of freshly cooked sauerkraut can be refrigerated for 1 month after fermentation is complete.
If refrigerated and the lactic acid bacteria that cause fermentation are controlled, sauerkraut can last up to three months if properly stored under the right conditions. This sauerkraut is a fermented product, so it will keep for at least two months, and usually longer if refrigerated. Fermented sauerkraut is a pickled product, so it keeps well under optimal storage conditions and can be refrigerated for several months.

It won’t last forever and there will come a time when it will go bad like so many other products. While open refrigerated sauerkraut has a long shelf life, it won’t last forever, but it will be a long time before it goes bad.
Refrigerated sauerkraut will definitely have a longer shelf life after opening than the airtight lid of room temperature sauerkraut, and will remain delicious for up to four to six months. After opening the sauerkraut container, the sauerkraut should remain safe and taste good if left in salt water for at least 3 months. Sauerkraut, kept refrigerated in an airtight jar, will keep for a long time; however, once opened, it will remain delicious and delightful for the next 4-6 months.
Unrefrigerated sauerkraut should be consumed within a month of opening, as ambient temperature causes it to dry out and lose flavor. Purchased refrigerated sauerkraut should be refrigerated and can last 4 to 6 months, depending on whether it has been opened or not. Refrigerator-bought sauerkraut should stay refrigerated and can keep for 4 to 6 months whether opened or left unopened. Try to store sauerkraut in its original packaging, or transfer it to an airtight container if the packaging is not suitable for refrigeration.
Even if you bought prepackaged sauerkraut, you’ll still want to go through the handover process, as the container it came in might not be freezer safe. You can freeze sauerkraut, although this is not recommended if you’ve opened the glass jar too many times because bad bacteria will eventually get into the sauerkraut. Even with proper storage, there is a chance of getting freezer burns, which will eventually dehydrate the sauerkraut. In the freezer, sauerkraut will likely last the same amount of time under optimal conditions, although there is much less risk of spoilage because bacteria (both good and bad) are suppressed below 0°F.
Storing sauerkraut in the refrigerator will slow down the fermentation process, but will not stop it completely. Speeding up the fermentation process will cause sauerkraut to spoil sooner or later, which is why most people prefer to store food in the refrigerator or freezer.
Although impractical, it is technically feasible to store sauerkraut in the pantry, especially if it is a pasteurized variety that no longer supports an active colony of fermenting bacteria. However, refrigerated sauerkraut will stay fresh and delicious for about 4-6 months after opening, but handle it with care because once new bacteria enter the jar, the sauerkraut can go bad! Even after this point, sauerkraut is unlikely to really go bad, but after a year it can start to suffer in terms of flavor and texture. Thinking that sauerkraut has a longer shelf life, they will spoil, especially if not stored in brine solutions.
