Pickles may spoil if they are kept out of the refrigerator for an extended amount of time. The development of bacteria is what leads to spoiling. Typically, pickles are kept in a brine solution made of salt and vinegar. The pickle is kept fresh by the use of salt, which also functions as a preservative.

Unopened pickles do not spoil in the fridge due to fermentation processes by the brine. It is best to store unpasteurized pickles in a refrigerator, whether or not you have opened the can, as this will delay the fermentation process.

Even after opening, if you store your pasteurized or unpasteurized pickles in a sealed container, they will keep for a very long time. If the pickles are in a jar or a crock, no, you do not have to store them in the refrigerator, as they have little to no moisture in them. You should always keep them refrigerated once you have opened the pickles, but a unopened jar of pasteurized pickles does not have to be refrigerated, as they are just made this way.

It is important to keep in mind that pickles are not sterile, so they cannot be stored indefinitely. We always advise keeping opened products in a refrigerator to help slow the bacterial growth, but due to their high acidity levels and their leakproof cans, unopened pickles can last years at room temperature. An unopened pickle jar can stay at room temperature (i.e., the pantry) or can stay in the refrigerator up to two years after its expiration date. Unopened, you can keep a jar of pickles without refrigeration for up to two years, or until the labeled expiration date.

In short, if you open the pickle jars and keep them properly stored (in sealed cans, in a fridge), you should be able to store the pickles for up to two years. Once opened, the pickles will keep for about as long as they are stored in a refrigerator, in a tightly sealed container. Homemade pickles also retain their freshness and flavors longer if kept refrigerated. Refrigerated, opened pickles are best within 1-2 months, though they can probably last an additional month or two if stored correctly.

Open pickles will be tasty after 1 to 2 months when refrigerated, but they are probably still pretty good for eating another month or two. Properly sealed, pickles stored at room temperature (under 75degF) or refrigerated last 1 to 2 years. Once your pickles reach your desired level of acidity, move them into the fridge to help them slowly ferment. Pickles that are not pasteurized are still a fermentation, and therefore must be stored in the fridge to decrease the rate at which they are able to ferment, or else, you will be left with pickles that are too acidic and bitter. If you do not store them refrigerated, your pickles will soon begin spoiling, as they can get contaminated quite easily once opened. These pickles are cooked in the brine for a short time, and they need to be refrigerated once you have opened the can.

If you leave the fridge door open and let the pickles sit for several hours, the enzymes start breaking the pickles down, and the pickles will lose their crunch. Keep in mind, pickles that are opened continue to turn acidic, so the longer they are left in storage after opening, the more acidic they taste. If pickles and pickled peppers are left outside the fridge for any length of time, they will not spoil and they do not present any further health concerns for consumers. Pickles and pickled peppers do not deteriorate and do not otherwise present any health threats, even when left unrefrigerated for an extended length of time.
