Does Italian Dressing Spoil?

Italian dressing, like most other types of salad dressing, can go bad if it is not stored properly or if it has been opened for a long period of time. Most Italian dressings have a best-by-date on their label that can give you an estimate of how long they will remain fresh.

If you are making a dressing using ingredients that will keep longer by themselves, then a dressing will generally keep at an okay level for around a week, and sometimes even longer. For the most part, Italian salad dressings stored regularly in a fridge for six to nine months will retain their best qualities. Properly stored, a non-opened Italian salad dressing packet typically stays at optimal quality for approximately 12 to 18 months.

The stored times shown are only for best quality — the texture, color, or taste of the Ranch Salad Dressing can change beyond this point, but it is generally safe to eat in most cases as long as it is been stored correctly, the packaging is intact, and it does not have any signs of spoilage (see below). While Best By is not a suggested usage date, it is the manufacturers best guess for how long Italian Salad Dressing will maintain optimal quality. If a salad dressing is packaged commercially and contains preservatives, it will keep for a couple months, possibly beyond the best-by date.

As long as your favorite salad dressing is not found in the refrigerated section of your grocery store, you can safely store it unopened in the pantry for a few months. Conversely, most salad dressings easily can be used up anywhere from one to four months after their expiration date as long as you store them refrigerated. As you would imagine, salad dressing can often even last one month past this date as long as you keep it unopened.

Of course, you often may be able to use a dressing like this for several days, and even for a week, after that date, depending on when you opened it. As long as the bottle remains unopened, you can easily keep such dressings beyond their best-by dates, including a few weeks. This is based on the fact that dressings are best for at least a couple of months past their printed expiration dates. If you cracked the seal or damaged it while buying the dressing, then it is possible that your dressing will expire earlier than the labeled expiration date.

If the dressing looks fine, smells fine, and you did not keep it longer than its expiration date, then you are fine. There are some exceptions to this rule, but you should use caution and use your best judgment if you choose to store your dressing out of the fridge. If you buy cold dressing, you must put it back in the fridge soon after buying it. You should store dried mixed dressings in a pantry or kitchen cabinet, sealed tightly after you open them.

You should make just enough dressing to last, but if you have any leftover mix dressing, it should go into the fridge. Many dressing recipes will say how long the mixture will last, so look up this bit of info if you are expecting any leftovers. The worst that is likely to happen is that your blended dressing will not be quite as flavourful as it normally is. If you purchase a bottle of dressing with the labels saying “Best By” or “Used By,” then you are safe to use it.

This does not, however, mean the dressing is expired or unsafe to eat, only that it might not be in its best form, marketing-wise or sales-wise. In some cases, you may still be able to eat old dressing once the best-by date has passed, so do not discount a good dressing simply because it has passed an arbitrary deadline. In other words, it is still okay to eat dressing past its best-by date, so there is no reason to throw out perfectly good dressing for a few arbitrary deadlines. Check the best-by dates printed on product labels for a sense of how long condiments such as ketchup, horseradish, pesto, and salad dressings will remain fresh, much as you would store-bought chicken salads shelf life.

In general, Italian dressings typically last around three to six months, but make sure you keep checking the visual signs or label, if buying at the store. Once opened, bottled dressings typically last for about three to six months, but be sure to check your labels, because these times will vary depending on brand and style. Vinaigrette can last slightly longer, at up to 3 months, and mayonnaise-based or cream-based dressings only last for a shorter period, about 1 to 2 months after opening. Dressings containing dairy such as Ranch, Thousand Island, and Caesar tend to last for one or two months after opening when refrigerated.

Typically, dairy-based options such as bleu cheese or Caesar salads may keep for another one or two months, and oil-based options such as Italian or balsamic vinegar salads may keep in the refrigerator for three or four months longer. If, instead, a dressing is a dairy-based dressing, such as ranch, it certainly is not going to last that long, with three to four days of good quality being about as far as you can realistically expect it to go. Even when vinegar is the ingredient, adding dairy in a ranch dressing, or eggs to a mayonnaise, causes a dressing or condiment to spoil faster.

Dairy-based dressings that are left out of the fridge for longer than two hours may run the risk of giving you food poisoning, so you are better off throwing them out. The shelf life for opened salad dressings is just the best quality, past this date, dressings may change in texture, color, and taste, but generally, if refrigerated consistently, no packaging damage has occurred, and no signs of spoilage, it is still safe to eat.
